Welcome to this edition of In the Winery with Anaba Wines as Winemaker Katy Wilson explains what happens to the grapes once they are harvested from the vineyard. After picking the Swan Clone from Las Brisas Vineyard in Carneros in the cool early morning hours, the grapes arrived at the winery and were immediately brought to the sorting table where leaves, overripe and under ripe clusters, as well as anything else we don't want going into the wine, are hand sorted and removed. This ensures only the best clusters make it to the next step. The grapes are then destemmed and ready for a cold soak. Stay tuned for more of the journey as these grapes become wine!
