It's because Shadowkeep was named by the Golden Order. It was a castle built by someone invading the territory.

Because I'm pretty sure it was built by the Golden Order, they use the newer language. It's actually an amazing attention to details by Fromsoft and the localisation team to distinguish between things that named/has been existed before and after Marika's ascension.

It's because Shadow Keep is held by colonizers so they changed the name to something closer to their language.
