Your reaction after eating what you cooked says it all. Now I want to make that too! I haven't eaten balbacua in a very long time. I remember once when I was little that it took like forever to cook but the skin was very delicious. I was surprised when you mentioned it's cow's feet. I thought I ate a pigs skin balbacua. Maybe I was wrong. Anyway, I'm hoping to try your recipe with pork hocks because beef hock is not available in the grocery store where I'm at. I talked to the manager of the grocery store to get me some beef hocks. We'll see. Maybe I'll try pork hocks while waiting for the beef hocks to show up in the store.
