Try as I might, my hands always get dirty when I cook, especially when bread is involved. I’m embracing it now. It’s actually really nice to see a chef embrace working with their hands. Mom used to make fresh roti all the time, and the recipe showcased here is similar, minus the buttering and salt. I saw you add salt and i was like 😧. You almost want your roti to be a bit bland-it’s your foil to a flavorful tikka or sabsi (although maybe I shouldn’t knock it till I try it). And true, parathas are great on their own, or with yogurt. I actually used to eat it with ketchup when i was younger. Anywho, this video has made me think of revisiting cooking Indian again, so many thanks for showcasing this!
@amitabhp6664 жыл бұрын
there are different ways of making something as simple as roti...in Bengal (and much of eastern India if I'm not wrong) salt is added to the flour and the rotis are not meant to be bland XD

Not just whole wheat , Roti is also made of Corn (eaten mostly in Punjab/Haryana) ,Roti is also made of Bajra aka Pearl Millet (eaten mostly in Rajasthan ), Roti is also made of Jowar (eaten mostly in North Karnataka ) its very tasty and healthy , Roti is even made from Rice called Akki Roti (Eaten in Southern India). Different Region have different variant depending on the availability of the grain.
@CreachterZ Жыл бұрын
So naan is made with white flour while roti is made with some other type of flour available in the region, but not white flour? Is that correct?
@goonj5 Жыл бұрын
@@CreachterZNaan is essentially made from maida or refined wheat flour that is devoid of all fibre. Roti or Fulka is made with whole wheat grain flour so it has a lot of fibre content which makes it more filling and easy on the stomach.
@goonj5 Жыл бұрын
@@CreachterZAlso flat breads made from Bajra(pearl millet) or Jowar (sorghum) or Whole corn grain or rice are called roti as well. Bajra roti and Jowar rotis (called as Bhakari in the state of Maharashtra) are low in gluten so preferred by calorie conscious people.

Instead of flowering the lacha paratha after it has been rolled out and ghee'd, spread an amount of brown sugar on the paratha to turn it into a lovely dessert. My aunt used to make these for my cousins and I as kids. Instead of folding the paratha like an accordion, you then roll it like a wrap (or a Dutch pancake) and tuck it in as nicely as Mr Cardoz did. You can immediately bake the paratha in the (cast iron) pan and it will come out as a delicious and simple snack. Don't worry if the sugar leaks out of the paratha while baking, it will leave a most delicious caramelized crust on the outside. To be careful not to leave on the stove for too long or the sugar might burn.

Ghee is essentially a clarified butter that has been rendered down. The clarification process is exactly the same only you allow it to simmer a little longer to cook out the excess water content and it extends the shelf life considerably. Clarified butters are a great way to cook with the flavors of butter but without the milk solids being able to be burned and affect the taste of the dish. Unless browned butter is a component you want.
@arijitkumarhaldar31974 жыл бұрын
Not being disrespectful towards anyone... trying dishes from other countries is cool..and they did an awesome job...kudos to the people..but for anyone who want to know about Indian roti...here are a few facts that couldn't be shown exactly here for whatever the reason maybe : We do not add oil while making the dough for roti. Oil is used only with refined flour..not whole wheat flour. The rolling pin used here was a Japanese noodle rolling style pin. For roti, we use a rolling pin that is slightly thicker towards the middle and a tiny bit thinner towards the ends. Also, there is a dedicated handle section like that of the spindles for flying kites. For rolling the rotis, we do not use oil either. We spread flour on a rolling board and use the slight tapering of the rolling pin to flaten out the roti while also it keeps rotating due to the uneven forces from middle to end. As a result the roti rotates on the rolling board with a thin layer of flour beneath it as we roll it out. We do not need to change direction of rolling at all. It forms a beautiful circle. Also, we bake it on a thick iron plate called a "tawa". Once both sides are properly baked, then we transfer it directly on the flame with a metal sieve..which makes the roti puff up perfectly in a sphere, not the uneven puffing shown here, coz it didn't bake properly before it was put on the flame. Also, ghee is not always applied on the roti.. it is a rare festive tradition when people love to relish on the food rather than eat everyday stuff. In my house...lunch is 3 rotis per adult and 2 rotis per children. It is eaten with vegetables or curry or even with milk. Happy to help anyone who is interested in Indian food and cultures 😊
