The liquid is not soup exactly. It is sort of thin gravy/curry. It contains gelatine from goat feet bones and fatty muscles. While it is boiling hot it flows well, where as it cool downs while eating and settle downs and become thick and sticky. The goat feet have less gelatine as compared to beef feet. This dish is called "Paye" and generally used in cold weather.
