The creamy dish you has is called 'KORMA'. It is vegetable curry dish prepared in coconut milk with strong spices like cinnamon, black peppers and others. The liquidy dish served us 'RASAM', an appetizer. Usually eaten after the mix of Rice and thick gravy Sambar or Yellow Lentil is eaten. The White Rice dish you tried out is a dish that is eaten last. It is called 'CURD RICE' that is usually eaten with lemon or mango pickle.

Yes that is a simple awesome dish, in North there is a similar (very close) is Kichidi (Maharashtra) dish again bordering both Karnataka and Telangana

So from the thali. The first curry you tried is ‘paprupi keerai’ which is a dhal spinach stew. Very popular in south India, and done differently in the different South Indian states. The second ‘soup’ you had is rasam. That is always eaten after you eat sambar with rice! Rasam is good for digestion (and if you ever have a cold or sick, eat it!). The 3rd thing you tried is sambar. South Indians eat sambar with rice, dosas, idlis, and vada. The best way to do a thali is have rice with sambar first, and with each bite you add either the spinach dahl curry, kuttu, or potato curry. Then second, you have rice with rasam, and do the same with each bite adding the different curries. Each bite can also include little bit of achar and papadam. The 4th is a Kuttu. A curry you can add to your sambar rice, rasam rice, or rice on its own. The potato curry should be added to sambar rice or rasam rice (we normally don’t eat it alone, but no judgement if you do!). The one you tried after the potato fry curry is Kuzhambu. That can be eaten with breads or rice. If you eat it with rice, add a little bit of the potato fry and papadum to each bite. Takes it to the next level. Channa is always good with poori bread. But channa is not a South Indian dish. When you go to south india, you will see a potato carrot and coconut stew served with your poori bread! The dessert is paysam. The noodles are vermaslii. Paysam can be made with rice or vermaslii and is basically a rice pudding. What you thought was coconut chutney is not coconut chutney and is the Thayir Sadam - which translates to ‘yogurt rice’ with has tempered spices and curry leaves. A South Indian specialty, that is the last thing you eat in your meal before your dessert. The yogurt rice is meant to cool your body from all the other curries and spices! You can add potato curry to it, or achar and papadum. We usually do not mix sambar or rasam with the yogurt rice! Hope that helps. I’m South Indian, so it makes me so happy to see you and the Alfonsos explore South Indian cuisines! 😃🤗 I’ll give you any tips to make the experience as authentic and incredible for you! @alfonsoandjessica
@RSang26

And one more tip! Payasam is a rice pudding. There are many varieties of them. It is not normally made with coconut. The last dessert you had with Lil Alfonso is ‘Elenyir Payasam’. Elenyir translates to coconut. So basically for that Payasam they served, they added coconut to it! But other places may not add the coconut! Again you will see many versions of Payasam in south India! @alfonsoandjessica

you hv been doing this for quite sometime and hv even visited india but have not figured out how we eat and how to eat our food ! here, you are having a typical south indian vegetarian meal - quite like the sadhya meal you had on onam when you even draped a sari ! a typical south meal is consumed in a sequence course 1. rice + dal 2. rice + sambar 3. rice + rasam 4. sweet dish - payasam 5. rice + buttermilk / yoghurt the foll are constants and are sides which are mixed with each course : dry vegetable dishes veg dishes with gravy pickles chutney papad the 4rth course is the sweet and is only mixed with fruit, if served in grand events the number of courses increase when roti / paratha / poori, different kinds of rice preparations and variants of sambar are served - sometimes even 2 types of sweets ! a north idian meal is not served in a sequence or as a course base rice / roti of different types constants dal dry veg dishes veg dishes with gravy raita - yoghurt pickles papad sweet dish is seved at the end of the meal north indian food is better suited for buffets as there is no set sequence south indian meals are aways served in a sequence - even a thali is consumed in the same sequence ! we, in india, dont do appetisers and samosa, pani.puri etc are snacks consumed between meals but never with them ! we also dont consume liquor / tea / coffee with or at the end of our meals we do consume a betel leaf based paan for our digestion after our meals sugar granules + fennel seeds are also served as digestives now that i am explaining our ways, i might as well add a few pointers ! we dont use both our hands while eating - only children are exempted ! we use our fingers and thumb but do not shove it inside our mouths ! traditionally, we would break a biscuit in small portions instead of biting it ! same with our papads or sweets too ! we always wash our hands and swish after each meal - we used to do this till we got westernised ! lastly, we would never ever point these out to you when you are eating with us as that would be considered rude !

Jessica A small piece of advice, its always better to ask the person who serves you to explain what is served and how to eat it ( sequence) then you will be able to eat it the right way and also enjoy your food, The rice with green peas is usually called fried rice or veg biryani and can be had first just plain or have it with korma - potato carrot in coconut gravy, or with raita that's yourghut with onions. Another tip please mix the dal or vegetable curry well with rice and the eat to get the real flavour. Don't mix your food lightly, you will not get the proper flavour of the food you are eating. Best is portion a small quantity of rice away from the mound of rice then mix whatever curry you wish to have, instead of pouring it on the centre. I hope you got it , happy eating. By the way your vlogs are good, and looks like you've got hooked on to Indian cuisine... Look forward to your visit to India.👌👍

Papadam and Apalum are the same thing! Big tip: don’t leave the papadam/apalum on top of any hot food until you are ready to eat it, or it will get soggy! That why it didn’t crack when you pressed on it on the Bise Brel Bath. The way to do it is you break off little bits of the apalum for each bite as you eat. This will keep the crisp of the apalum! Can’t wait to see you guys go to India again and all the videos!! @alfonsoandjessica

So let me ne tell you guys the strategy to eat an Indian thali so rice always goes with dal or sambar if it's south indian we pour a good amount of dal on the rice mix it well making sure rhe rice is not dry to eat then we eat it so about the side dishes that comes along in the thali we never think twice mixing it with rice eating it😁 everything can go with rice dal mixture with each bite of rice we pick little by little every dish curries and eat it and finish them all by the time rice gets finished so from next time onwards if you are eating an indian thali mix dal rice eat it when you go for the other dishes in the thali just mix it that too with the rice😁

This is not a bisi belle bhat. Bisi belle bhat looks like a veg. biryani and that is spicy dish, it's belongs to Maharashtra mainly prepared in marriages.
