OK.... I understand about the features and issues like energy and safety for induction - but how WELL do they cook? Such as, how finely tuned are induction? I had an induction plate a few years ago and it didn't handle low-heat subtlety well. Are today's ranges better? And what else in terms of cooking efficacy? I'm strongly considering induction, but want to know I won't hate cooking on it.

I whole heartily encourage you to switch to induction! There is a bit of a learning curve; but it isn't rocket science! As they say; " if I can learn how to use them anyone can!

Most cast iron skillets have a rim around the bottom. Will this prevent them from working on an induction cooktop?

American here, think about it; if the majority of us fell for trumps stupid %%@#; that illustrates the lack of intelligence here. Fortunately not all of us are that slow! And induction has finally gained a foothold here. Once the stone-agers give induction a try it will catch on like wildfire. I cut off the gas in my house and have used induction for the past 20 years; will never go back!❤

I love Induction. It's energy efficient and safe. But yes, i find a slightly lower food taste than gas range. But today's ranges are better you should try it

@Tooljunkie4you Energy efficient and safe are nice, but I'm wondering how well they manage temps across all levels, and how well they will cook. Why would gas give a better flavor? Not that it matters to me, though - I don't have gas in my area, so it's all electric.
