Sadly I don't have any decent wood piercing units most are push and that makes it quite difficult because that guy in the center annihilates if you're even remotely close

Non-wood element piercer would work too as long it's not Fire since it's a water stage.

What party did you use for floor 19

I used Maid Mari + 3 wood piercers. Alternatively you can use any push unit to push the boss to the side then just keep hitting the boss VERTICALLY until the boss dies. (SAFE METHOD: When pushing the boss, you should stop immediately after the first push hit by tapping the screen once OR ELSE you might accidentally push the boss back into the center.
