Love it bro. I grew up there. Visited back around 2015, and didn't recognize anything at all. However being poor and not knowing what poor was was great. As an idiot, during summer I wind surfed to sand key, not knowing the wind would die. Took me 4 hours to pump that sail to get back. I had no idea how dumb I was. Happy to be on the main land. Go bro!

Me and my father used to reef fish out of marathon we started fishing in the late 60s and the last trip we made was in the late 90s. We had spectacular yellowtail, yellow jacks, ceros, etc. We never used live bait we castnetted balihoo and used chunks of the hoos. Thanks for all the effort in making your videos!

Great show. I love fishing for yellow jack, but never thought about curing them. Your cure is what I do to develop a pellicle on the fish before I smoke them. Thanks for showing this, good to learn.

That's a fun way to catch fish, nice and simple and effective. I use lots of jigs and soft plastics or Texas rigged soft plastics in the Chesapeake, but I'd probably catch more fish with bait. That's how I grew up fishin' in Sarasota, catching local bait and using it to get supper. I don't think I could have let that beautiful schoolmaster go, it would be so good for making ceviche or something else tasty. Thanks for sharing your adventures with us, cool video. Great video captain! The gulf side of the keys is so underrated! I have a simple request, 12-20’ 2-4” Clark spoon with or without a planer catch clean and cook! You’re going to be surprised what will eat that bait…

it’s the skin that held the moisture. it’s like cooking a redfish on the half shell, it’ll hold moisture. try without the skin. just like you said, it’s thin so it should go quick, and with the skin you think you needed more time.

Yum! Jacks are the steak of the sea for me. I love their meaty texture and more robust (but not fishy) flavor. We have the delicious, butt kicking, California Yellowtail out here on the West coast. I've seen curing like this done with salt 100% surrounding the filet to promote a more even cure. You mentioned using foil with previous cures--I am surprised you haven't had issues with oxidation on the foil. Regardless, great stuff! Thanks!

My guess would be the skin kept the moisture in. You had mentioned usually using larger fish and removing the skin. We have similar issues when we salt cure salmon in Alaska. With skin stays softer skin side than when we remove skin altogether.

I tried this with Pompano, following your recipe, and I totally screwed up because all the water collected at the bottom and they ended up soaking in it and they were way TOO salty! I'll have to try this again though. Thanks for the idea!

I wouldn't guess the paper to be the problem. Maybe salt under the skin too? That's what I do with salmon and it draws moisture out even through the skin.

The Old timey fishin fella's up in Downeast Maine make a salt n water brine in a bucket. Let em sit overnight. Hang em in the air. I was skeptical but wasps n flys seem to add flavor believe it or not. 😉

My friend ate a Jack crevalle. He was so excited. "It tastes like redfish." I doubted him. But.... His enthusiasm was high enough that I decided to try it for myself. 90% of how fish tastes is how it's prepared. In Jacksonville? There's the top tier Reds, trout, flounder, sheepshead, black drum, snapper, grouper, wahoo ..... all are fantastic. Then you step down to the king fish, cobia, Mahi....all do-able but overrated. Especially cobia.. Then there's the Jack crevalle. Does it suck? NO. It's a "4". It's not fishy. It's dark. It's firm. It's not flavorful. I catch TOO MANY top tier fish to eat a "4". If I was staving? Yes. But none of us are starving. I'd rather eat P B & J than Jack crevalle. It does NOT taste like redfish. I ate one bite. Then a 2nd bite to make sure. Then scraped it into the garbage can. It's not offensive. It's just not good. A "4". If you want to eat a "4", go on. I'm only eating top tier fish living in Florida.
