At one ice cream shop in New York City, owner Jason Liu says one secret for great tasting soft ice cream is making sure the equipment is always clean and sanitized. “The cleaner the machine is, the better the ice cream actually comes out,” he told Inside Edition. But other places may not be as spotless. It also depends on the flavor and how the soft serve is made. Basic vanilla, or chocolate made with chocolate base and syrup is good for longer than, say, maple, because of the maple syrup. Really, your soft serve is good as long as milkstones don’t form in it, which can result from an unclean machine, a clogged hopper, or how the soft serve is made. It should be cleaned about once a week. That’s a normal timeframe.

I worked at a froyo shop with these machines. We used to run hot water and cleaner through the machine at least 3 times every night, until the water runs clear. This was part of our main closing duty, so it really never got missed. It wasn’t that hard though, so the fact that this doesn’t get done at other places is gross

That’s actually not enough. You have to disassemble the machine and take out every rubber and clean it from the inside. I used to do that everyday and it takes me like an hour to clean. I also run water through it the next day before I put any mix in it.

I actually had a similar experience where I had gotten a soft serve ice cream and it had tasted very different than normal and had a strong chemical taste to it so i returned it and reported it to the owners where they had refunded me with a new one it still tasted unpleasant and so I ended up tossing it. Later I had found out that the ice cream machine wasn’t properly clean and the bleach for it had mixed with the cream and caused a huge distraction away from the business due to the many other people that had the same issue there before. Cleaning is important but u must also make sure it is cleaned properly or does little to nothing.

My first job at 16 was at a TCBY, the frozen yogurt place. The owner and manager were super nice and they had top notch standards. At closing every single night the store was cleaned, mopped, sanitized. Plus all 4 machines were drained and broken apart and cleaned and sanitized. It actually made me proud to work there cause I knew we were doing right by everyone.

Ok for the McDonalds "Drip Tray". It's called a drip tray for a reason. It collects any drips until it is cleaned. It never touches any of the ice cream. It's like the inside of a vacuum.
