you did a good job even having a slight different it works out, i know its a pain to get all perfect. I did a lot on double electric gates and there the same hell of a job to even get it to a state that out of line differences are not show up that much to see it. Any very little adjustment have effect on everything, so needed hours sometimes too to make my customers satisfied.

sounds like you might have warped door slabs, its an unfortunately common issue that you need to check especially on french doors.

Doors are frustrating sometimes you just have to walk away for the day and start again in. The morning sometimes it will just click. You will get it eventually.

Take out the middle hinge pin and bend it ever so slightly to give it friction and it will stay in place better

Jamb extensions for doors go on the OUTSIDE and jamb extensions for windows go on the INSIDE... never mount a door half-way into a wall..... I know this advice is too late......

i had a similar problem with some french doors .
