I really appreciate the "why you do this" parts of your instruction. Most others just say "do it like this" with no explanation why.

*I like that I can "fry" something on a whim! An oil fryer takes so much more time to clean and prepare **MyBest.Kitchen** a chore which usually kept me from frying all together. Also, the lack of needing oil to fry means that my family and I are eating healthier... while still enjoying the crispiness of fried foods.*

Easy to use touch screen, can stop and re-set time kzbin.infoUgkxD4Qeo-HRLxMfom_PDinM_SBfes00qJsB and temp at any point in the cooking process, unlike some of these (an Ultrean model we returned) that need to time down first to re-set, which waste power and time. Stays cool externally and the 3 beeps when done aren't that bad, 5 beeps for Shake reminder on the pre-sets. So far chiken, pork chops, grilled cheese, hot dogs, asparagus with prosciutto, frozen sweet potato fries, have all turned out really well. Holds 4 average drummies which works well for 2 people. The recipe booklet is great. This size unit doesn't take up too much space on the counter-top so that's a bonus. We're looking forward to using it even more in the summer instead of the oven, to keep the house cooler when we aren't barbequing. Less cleanup than with an oven. The detachable inner basket is easy to use, no problem with the screws as some have commented, but a simple screw driver would remedy that if it happens. We really love this little gizmo!!

I know this video is 2 years old and I sincerely hope you get this comment. I tried this recipe tonight and I was so shocked at how delicious this was! We recently processed 23 of our chickens and my dad won't eat them (he's old and cranky). He says he only likes fried chicken. Well, he ate this down to the bone! it was a little bit more work for me since I have never done this before, but I was so glad I did! The breast meat cut with a fork. It was tender, juicy, and just amazing. I can't say it enough! Thank you so much for sharing your knowledge!

Great recipe that I'll definitely use. Thank you. Whenever I use my mister to spray food like that, I put the pan into my sink (or you can put it over the sink if yours is divided) then the over-spray goes into the sink and not on the countertops and nearby stuff.

Very good recipe!! I exclusively fry my chicken in the air fryer now. It tastes so much more like chicken instead of oil. Tip especially with chicken that has skin the oil in the skin will add moisture to the flour as well so I don’t spray the dry spots with oil until I check halfway usually it’s only a few spots that need oil. Also substituting 1/4 cup white flour with whole wheat makes a perfect golden crust.
@LanaUnderPressure4 жыл бұрын
Thank you! Great idea about the whole wheat flour. I actually find as well that if you let it sit a lot longer than 15 mins it soaks up the flour as well. Another thing I do, but forgot to mention, is take a paper towel and dip it int he egg wash and just pat any dry flour.

You do that in spades.😁 Unless of coarse it’s an advanced training one. You explained every detail and the why of every detail. Bravo.👏 So many others fail miserably. Nothing more frustrating than watching a how to video with 10 minutes of hi I’m _____ and I’m going to show you how to_____. Then 2 min. of getting everything ready. And the next thing you know it’s already to be put in the _____. Then it’s done. I hope you like my video, see you next time. If you’re not a full time teacher, you should be.

PS I guess someone should have told my Italian mother that the way she made fried chicken was 'Southern'. Having never been to the south before she was 45, she would have been very surprised, LOL. Don't know why the south has claimed that way of frying chicken, but ok - let them, it can make up for how bad the okra and hominy is ;)

Great video, I'm going to give this recipe a try. I do have As a suggestion though. Why don't you use metal rack from inside your air fryer during the prep stage of your chicken recipe? That way, you can transfer the prepped chicken all at once versus having to hand-transfer each piece individually and possibly losing parts of the coating.

I am originally from the south. That said, in an Air Fryer you have to add moisture before your dredge or else the flour will stay dry and just create a powder. When cooking chicken tradionally using lard or oil, that is the moisture that cooks the flour. But in an Air Fryer, you don't have that so the egg becomes the moisture. But the second flour dredge gives it that Southern fried chicken effect. And I'm pretty sure it's not considered a batter if you don't mix the liquid into the flour/cornstarch and create a thick liquid. Either way, if you are going to cook without oil, you have to make some concessions.

it helped a LOT! can't wait to try - just wondered why you didn't use the air fryer basket rather than putting directly on the baking rack?
@LanaUnderPressure3 жыл бұрын
Great question. When cooking anything int he air fryer that you want to get browned on all sides, the least amount of surface area of the food that touches any rack or tray, the better. Also, you can cook so much more on the rack vs the basket and it't much easier t clean. I rarely use the basket unless the food is too small.

I have twice tried to do “fried” chicken in my new Cuisinart convection oven. Last night, the temperature probe read the targeted 165*F. The crust was slightly golden brown but not crispy. I put it back in for several more minutes with only a little improvement. The internal temperature got higher, about 179F, but the chicken remained nice and moist because I had brined it. I just can’t figure out why the crust doesn’t firm up and get crispy. Here is my process: Brine the meat for three hours. Rinse and pat dry. Put meat in milk/egg bath. Shake off excess liquid. Dredge in seasoned flour/corn starch. Lightly spritz both sides with oil. Convection cook at 375 for 30 minutes, flipping meat halfway through. By then, the internal temp is hitting 165. But even 40 minutes is not giving me a crispy crust. Should I skip the egg wash? (Too much liquid?). If so, how will the breading stick to the meat? Does having a baking pan beneath the chicken interfere with convection? I’m really a very good cook and handle even fancy recipes. But this should be simple and it has me stumped. My technique is off somewhere. I’d appreciate any guidance!

Hi, I bet in a fryer your recipe would be delicious. The air fryer is a different beast and often times it has nothing to do with the cooks ability. Some suggestions I have for you... once you pat dry, let it sit out so it really dries out. Then before you put it in the egg bath, dust in flour. The drier you get the skin the better and since you brine it, it makes your chicken really moist but that also impedes the crisping. Also let it sit after the last dredging.

You are so very welcome! I hope you enjoy it. Seasoning the chicken the night before is smart. Sometimes if I have time, I will brine my chicken.

Will this work in any “oven style” air fryer?

Such a great video. Very clear step by step. Thank you. I don’t have an Omni, instead I have a caphalon air fryer. I hope this recipe works in it.

Love your videos. Your videos on the Omni are very helpful. I am looking at purchasing an Omni Plus in hopes that it will replace both my toaster oven, which just died and air fryer. But I would like to know if it does a good job making toast since it will be used for toast on a regular daily basis with other foods and types of cooking being frequent but secondary. Any input on this would be appreciated. Thanks
@LanaUnderPressure4 жыл бұрын
Hi! Great question. It makes toast pretty well because unlike the Vortex Plus/Pro, the fan turns off in Toast mode. I don't make toast alot, but I do know there is a learning curve to get it just right. Honestly, the few times I make toast for my family, I still use my toaster oven just because I kept it for sentimental reasons and it's just one button and I'm usually cooking something else in my OMni at the same time. That said, what you could do is buy the Omni, test it out to see how you like the toast function, and if you like it done in your toaster oven better, then return it.

I have a Vortex, but I was wondering about what if you double dipped the egg wash and flour again after resting the first set? Would it be too much? Or would it just be more crispy coating?
@LanaUnderPressure3 жыл бұрын
Hmmmm, I like your thinking. The crispy coating is the best part so it is worth a try!

I just watched your video for Southern Fried chicken. You used chicken legs, I have bone in chicken thighs is it the same temp and time?
@LanaUnderPressure3 жыл бұрын
Hi. Sorry it took me so long to respond. I usually reply very quickly. Yes thighs would take about the same time but make sure you check the temp with a thermometer when cooking chicken.

Is the oil sprayer hard to clean.? I find the oil bottle always have the bad odor.
@LanaUnderPressure3 жыл бұрын
I use a small bottle brush to clean mine and it works great. I also fill it with water and spray it a few times to rinse out the spray component.
