Instant & flavourful Akki Roti
Ingredients - 3- 4 cups of Rice flour, chopped 2 onions,
grated fresh coconut, cumin seeds,
finely chopped 3 - 4 green chillies,
curry leaves, coriander leaves & salt
(Grated Carrot or Dil leaves are optional)
In a bowl , put 3 - 4 cups of Rice flour or as much as required, add a teaspoon of cumin seeds, then add 2 chopped onions, 3-4 green chilles, chopped curry leaves, coriander leaves and mix well, add in salt to taste, add required water, give it a nice mix. Adjust the dough with water for consistency. Mix it well with a hand to form a proper dough. The akki roti dough is ready to use it.
Take a Tawa/pan drop a spoon of groundnut oil spread out, make a ball from the dough & flatten it by hand or dab spread out to a round shape into the Tawa or pan, make small hole in the centre of roti, then add a teaspoon of ground nut oil & place it on gast stove, let it cook for a few minutes, then flip it another side of the Akki roti, & Ensure to cook both sides well.
Meanwhile, take another Tawa/ pan, make a ball & flatten it by hand or dab, spread out to a round shape into the Tawa or pan, make small hole in the centre of roti, add a teaspoon of ground nut oil & keep it ready. Then, let it cook, then flip it another side of the Akki roti, & Ensure to cook both sides well
Repeat the process in the same way for as many Akki roti you would wish to have.
(Let the Pan cool down by itself for a few minutes in between for flattening or dabbing the next one)
Instant Akki Roti is ready to serve with curry leaves - chutney powder, or coconut chutney, or pickle of your choice
