Again same bad habit of putting haldi in vaghar of hot oil and ignoring your hubby. He had given you the correct advise while making vagharelo rotlo of not putting haldi in vaghar. He was right as it burns the haldi and destroys the main nutrient enzyme which is released out of it. You cook everyday which is great, but having the knowledge of cooking is also very important which we learn from each other and our oldies. It's your decision now whether you take your hubby's correct advise and never put haldi in vaghar. Put it in when you put rest of the spices. And if you really want to learn correct way of cooking, once the oil is hot, completely slow down the temperature and let the vaghar cool down a bit while the cumin and mustard seeds are popping inside the oil, this way the seeds or dry spices release aroma and flavour and not a burnt typical Indian household vaghar that stinks the house, clothes and neighbourhood. Then add vegetables or daal, etc in whatever you are making. Our oldies used to use this slow cook method in villages and they were absolutely right.
