Instant Pot Lentil Soup

I make a lentil soup like this with a bit different spices. Take out about a cup of the soup, blend it and put it back in. Slightly thickens and makes it a bit 'creamy'.

Just made this. I would add all the spinach after pressure cooking and cook with the residual heat to maintain a brighter color and more structure. Some diced potato would be nice, too. A+ for the recipe!

I made this last night and it was great! I added a couple tablespoons of tomato paste while sautéing the vegetables and some diced Yukon gold potatoes.

Definitely agree. Smoked ham hock and lentil is legendary. Would have to cook the ham hock separately - there's a ton of fat that comes off it, most of which you'll need to control/remove.

I do mine with onion, olive oil, clove garlic, lentils, bay leaf, tomato and elbow macaroni in water. Nothing sautéed, just throw it all in the pot. Very plain but very good. It’s one of my winter soups. High of 101 today so won’t be making it for probably another three months.
