This sweet purple potato milk buns are so good. Came out soft with great textures.
The milk buns have a hint of sweetness. Instant pot is a big help in proofing the dough. If you don't have instant pot, you can use the oven to proof your oven. If it is warm where you are at, no need to use the oven to proof.
Not taking favorite, :), but this is my favorite milk buns by far.
Ingredients:
400g-420g fresh sweet purple potato (yam)
4 cups bread flour (all purpose flour works too)
2 tsp + 1/2 tsp active dry yeast
1/4 cup + 2tbsp granulated sugar
1tsp + 1/2tsp salt
1/4 cup unsalted butter
200g milk (close to 1 cup)
2 eggs
1/2tsp ube extract (optional)
Baking pan 9"x11" ( In the video, I mistaken said 9x13"). Oopsie! :)
