As an editor and a writer, I totally agree with you. PC language has gone too far. Those PC people have a litany of terms that I think you don't want to know.

The point is precisely that you don't _have_ to offend someone. You're choosing to offend them. You're choosing to be rude and inconsiderate because you're choosing to treat them as lesser people. You can examine your own assumptions and insecurities for your motivations, but from my 25 years of experience as a professional editor and writer I can tell you with absolute certainty that if you're aware that a particular term is hurtful to someone else and you use it anyway, it's not because you have to, it's just because you want to. If you're unable to conceive of any other possible wording, well, you're not very good at writing or editing, but you can still look it up.
