That looks nice Iftari meal. Did your mum soak the lentils before it was added to the pakora mix? I might try that. I usually make with just daal and onions chillis and dhaniya leaf, Piajoo my inlaws call it.

Yes just lentils and onion is how we make it. Typical small portion for family of 6 1 cup lentils, 1 medium onion finely sliced . Soak red lentils minimum 4 hours , ideally over night. If it’s chickpea lentils they’re thicker , so it may require soaking overnight . (I think red lentil one is the tastiest, but other lentils work well too for a different taste ) Then make into a rough paste . Add a few tbsp water at a time. Grind so you can’t see the lentils. It’s ok to do half the batch smoother and half the batch courser, and mix it together . Just don’t make it watery . I only add turmeric 1/2 tsp, , 1/4 tsp chilli for colour , a couple of green chillies finely chopped and a few tablespoons of corriander leaves . 1 tsp salt for 1 cup lentils If yours is more watery than desired add a tablespoon at a time of plain flour or gram flour. I find gram flour makes it drier in taste though .
