If i cook a pizza, can i put straight inside and wait until it goes down to -18 or should i wait until is cooling down first?

Put it straight in and start the chilling and freezing process. One of the great advantages of a blast chiller is that your food doesn’t need to sit around, slowly cooling, until you can freeze it. They’re amazing appliances!
