Poitín - pronounced pocheen. Its Irish moonshine. Supposedly it can be made from cereals, grain, whey, sugar beet, and potatoes. Traditional poitín is good for making you feel sick, starting fires, stripping paint, muscle rub, making you fall over a lot and making you go blind. Was often stored in holy water bottles which explains why one of my uncles was so devout.

@@stephendee7839 We had a drummer in my college Jazz band who had just turned 21 while we were on a trip to San Francisco. She was a skinny little thing, who was as tall as I am but weighed about as much as my left leg. She came down to the bar of the hotel we were staying in and sat down with me, another guy, and the band director who was known to have a sense of humor. She'd never drank before in her life, and upon looking at the menu chose a Long Island Iced Tea because she liked "tea." An hour and a half later the band director had bought her _four,_ and she had gone from happy, to _really_ happy, to stupid, to sleepy. The bartender refused to serve her any more drinks. Me and the other guy had to pilot her back up to her room, where her roommate (who was PMSing hard) tried to refuse to let her in. She took a bit of convincing, but eventually let us bring her in and put her in the bathtub. Needless to say, this poor girl looked like death warmed over when we took her to breakfast the next morning, and her roommate was about ready to kill us. Hell, I didn't do it! I had nothing to do with it, except getting her back to her room safely. Semi-safely.

Moonshine is made from corn. According to Google, poitin is made from "an eclectic crop of cereals, sugar beet, molasses, and geography a given, potatoes"

Poitín gets it's name from the container it's made in: a small copper pot still ("-ín" in Irish means "small"). Fairly sure pot stills are used for some moonshine too, so definitely could be some connection.

My poitin story is many years ago my father got to try some when visiting his brother in law who still had cousins in Ireland. The poitin had been smuggled in by a nun who had explained the bottle to the customs officials by saying “ it was just a wee bit of holy water she was bringing to her dear Cousin John”. They waved her right through. That night my dad got very tipsy and danced in his night gown ( I’d made as a joke).

I make moonshine, as many do. I've done so for decades, taught at first by my elders, then by experience. It may well be a taste that one must habituate to - I have no idea, as it is what I prefer. It curls around the tongue and speaks to you of friendship and loves long lost.

Whenever I make spritzers at my bar I use Sprite or 7Up because it helps cut any acidity in the wine. If the wine is on the cheaper side it will be more sour/acidic usually. Just a little tip for the future 😊

White wine and soda water is the very definition of a “Spritzer” which I must assume then is not a common cocktail in Ireland but is quit popular at in the U.S. and can even be bought premixed from certain wineries over here. Often it’s made with a sweeter white rather then a dry white wine.
