We called it changing water did that the year 95-99 when my grandpa retired and sold his place I was 5 in 95 ran the module builder and plowed up the fields drove the old Willie's jeep back and forth to get parts from the barn and sometimes to town

This does not always work, especially for higher embankments. Water flows back as soon as you release the suction.

A different way of doing it but gets the job done I guess. I always stand on top of the channel to start them, saves getting mud everywhere and wrecking the channel

You were using a good technique to 'steal' water again for irrigation. The water can be travelling for long distances, like 10 miles for your farm house. I think it is better to look back 'Karez' done by arabs in Baluchistan, Pakistan centuries ago for agriculture.

You use gravity and the downward slope to water the field. Unless you pressurize the irrigation pipes, this method is cheaper in materials ( no need for lard sprinkler system)

The siphon contains no valves. The hand covering the pipe's end each time it is drawn upwards creates enough of a seal to prevent the water from falling out as long as the lower end of the pipe remains below the water's surface in the channel. Each time the pipe is pushed back into the channel, more water is forced into it. When the pipe contains enough water, the end is dropped into the top of the furrow and gravity causes water to flow through the siphon from the channel over the bank and into the furrow.

How can make constant discharge of siphon, since discharge depends on head

I use siphon tubes on my farm. You have to set the correct amount of siphons for the stream size you have. If you set too many, the water level will be drawn down, head decreases and discharge of each siphon decreases. If you don't set enough, the ditch fills up and eventually over tops and washes out the ditch. But if you have a consistent delivery of water over time, the discharge of the siphons will be constant.
