I'm preparing the tax return (1040) for my parents who are elderly and struggling cognitively. I'm not a tax professional, so I don't have a CAF number of a PTIN. I do my own return and their taxes are simple enough for me to handle, but not sure what to write for CAF No. and PTIN. Do I put my SSN? Leave it blank? or maybe there's a different form I need to fill out?

You can fill this form out. Since you're not a paid tax preparer, you don't need to have a PTIN. A CAF number is assigned by the IRS, so this only pertains to people form whom an authorization is on file. You can enter your SSN, and select option (f) in Part II.

Do I need this just to have a CPA do my taxes or only if I am going to be audited?

You do not need to use this if you are only expecting your CPA to do your taxes. If you end up being audited, then you would use this to authorize your CPA to represent you in front of the IRS during the audit. Otherwise, your CPA will have a limited opportunity to engage with the IRS on your behalf.

If you wanted to remove POA from everyone else and wanted to appoint yourself would you mark yourself as a family member or officer?

According to the form instructions, this is what you would do: If you want to revoke a previously executed power of attorney and do not want to name a new representative, you must write “REVOKE” across the top of the first page with a current signature and date below this annotation. You must then mail or fax a copy of the power of attorney with the revocation annotation to the IRS, using the Where To File Chart, or if the power of attorney is for a specific matter, to the IRS office handling the matter.

That’s a legal question that I can’t answer, but I don’t think that you would be able to do that.

Well How do I gift to the IRS? I want to do it. Also how you appoint the IRS as a representative or trustee for a court case as workers compensation? You can't gift directly to the IRS, but you can make financial contributions directly to the federal government. Here's a link to the Treasury Department page with more details: www.fiscal.treasury.gov/public/gifts-to-government.html I don't believe that you can appoint the IRS as a trustee or a representative for court cases. But if you wish to ask for assistance, then the most appropriate office would be the Taxpayer's Advocate Service. You can go to the TAS website or file IRS Form 911 (see links to additional resources on IRS Form 911 below). However, I highly doubt that you would receive a favorable response in doing this. For an S Corp, do you list the owners name or the Corp name in box 1?

You would list the corporation's name in Box 1.

Yes. Since you are a separate tax entity from your S corp, you would have two separate forms.
