I've tried both on my bmx bike where the wheels face a lot of lateral force. I prefer over-over-under, because it kinda breaks the vibration of the spokes when landing sideways and makes a lot less noise. Haven't noticed any difference in strength tho and I can say I'm heavy on my bike.

wow....amazing so many have different opinions on laced wheel sets, only 2 guys came across as to why they do what they do and seemed to fully understand why...... over over under at the very least for me, but does depend which discipline the wheel will be used for, that lateral strength and confinement of breaks due to style of laced wheel opted for is something to bare in mind, thanks Kelvin m8, great simple question....like an elephant in the room m8

You are imagining things. There were few opinions not many, & none of these guys had any data, just an opinion (and everyone was selling). Nobody has any proof to support their opinon, none said, "We have measured and ...." The most valid reason given was Shimano's, "... cuz that's what everyone does" the rest were bullshit. The only lesson here is, people (like you) imagine things and imprint it onto what they think they heard.

I had a catastrophic rear wheel failure and did notice the interlacing helped stop a complete obliteration.

I didn't have "Park Tool does an homage to 'The Big Lebowski' " on my bingo card, but here we are. As for myself, I interlace. I started that way because that's what everybody else does, and continued when it occurred to me that it allows one spoke to keep some tension on the other if it starts to go slack.

Over-over-under. Because that's what they say to do in the Park Tool wheel building series, so that's what I did and it worked.

I like that my bike's wheels are interlaces. That gives it a better look. It can squeek but, i feel that interlaced wheels can be stronger.

I need to upgrade my solid axles to quick release, but I can only find one video on how to do that. It's not a Park Tool video either. It's just some guy in his garage. Can we get some videos on axle upgrades please? And what even is a thru axle? I hear they are all the rage now, but will they even work with my hubs? I need Calvin's expertise por favor. I'm lost in a forest of threaded skewers.

Good topics, will add these to the list. You can convert to a quick release style, but thru axles take a different hub design as well as different fork/frame dropout design.

honest question, how long should it take a shop to cut / rethread spokes, lace and true a wheel?

This is very dependent on what resources the shop has. A shop that has a professional threading machine can cut and thread spokes for an entire wheel in less than 30 minutes. Then building/lacing and tensioning can take up to an hour. So, upwards of 1.5 hours per wheel.

Jobst Brandt who literally wrote the book on bike wheels says “interlaced spokes take up each other’s slack during severe radial loading and reduce the chances of spokes becoming loose”. Whatever jobst says is good enough for me.

Spokes start interfering with other spokes's heads, and the projection of the spoke is no longer as tangential. There is little to gain. From what I've read, there isn't any real benefit. At this point, it is better to add more spokes: 36 or even 40. Also consider thicker spokes.
