You may have mentioned this but dry brining wings works great in the basket. I have also been throwing about 2tsp per pound or so of baking powder in with my kosher salt and garlic powder to toss with the wings before the dry brine. Gets a good crisp through the whole cooking process. I think it protects the crisp a little after saucing too.

Thanks smoking dad! Having just bought a Joe Tisserie plus basket, I only searched for YOUR videos on how to make great wings. Expecting delivery tomorrow, can't wait to cook some wings immediately upon receipt and surprise my wife! BTY, EVERYTHNG we've grilled in our Kamado Joe classic with your direction has turned out phenomenal, keep up the great video's!

Have you tried dry brining with baking powder? I tried it last weekend with great success by adding 1 tsp per 10 wings along with some salt and rub and let them sit overnight on a baking rack in the fridge so they can dry (separate them for airflow, so not in a bowl). Noticeably crispier texture. I also just cook them for about 20-25 mins at about 350-400 in the mesh basket (lid closed) and then add sauce in a bowl afterwards. They setup nicely in about 5 minutes, so no need to return to the fire after adding sauce and the basket is easier to clean. I do like the new KJ basket and I'm sure it will be on my Christmas list. Fast forward... I got one of these and followed your instructions for my inaugural cook. You are totally right about the build quality. I'm not a big fan of saucy wings so I decided to just do them naked with some rub. I raked the coals under the basket for the last half of the cook but wasn't happy with the skin so I finished them off on the grill. I'm eager to try more things - please consider more videos with this tool.

I passed on the napoleon basket, but this kamado joe version seems much more versatile and easier to clean. I hope to see what else you can do with it and will seriously consider it

The coolest thing I just realized mine does is allow you to use both the wide and flat cages at the same time. So for a guy like me grilling a combo of marinated and dry wings I can split the cage down the middle and keep them separate from each other!

I bought an “only fire” basket from Amazon. The KJ basket was out of stock. It’s definitely not as good as the KJ, and once it packs up I will buy the KJ version. However, if you have a good quality dishwasher (I have a Miele) you can put it in the dishwasher at 75degC on the pan programme and it’ll come out spotless.

My KJ joetisserie basket kit recently arrived and I love it. The first weekend I did a whole chicken and then ribs. The design offers a lot more options for cooking over just using the joetisserie and for me not always having to deal with having to skewer the meat and then get the forks in and making sure its trussed and lined up over the coals every time you want to use the joetisserie is a nice option to have. It's just too bad it wasn't available before I spent the money on the Napoleon basket as I doubt I will get much use out of that anymore given how much easier the KJ basket is to clean lol. I've only had it a few weeks but so far its a big thumbs up from me. 👍

James, I just wanted to say how much I enjoy your channel and I have been binge watching your videos. I know how much work it takes for all of the videos, as my son has a successful cooking KZbin channel. I'm really trying to learn about the Big Joe Kamados. My question, as you mentioned here about the taste of dripping fat on the coals, how low of a temperature can you maintain without the deflector so the meat can drip directly on the coals with the lid closed? Thanks again for all you do.

The basket is built tough. But for $199 US dollars it’s a bit much. Even the napoleon basket is $60 and there’s a knock off that’s near identical for $40 from Amazon. They even have a knock off for the classic rotisserie kit that comes with a 2 speed motor that’s $80 less than the KJ one. I also got a porcelain coated inside and out Dutch over for the X accessory so you don’t have to worry about higher acidity foods eating the seal off the cast iron. Even non fry brined wings are amazing in the rotisserie basket setup. I just spray the basket with pan before each cook and split the basket a place in dishwasher and it comes out great.

Started using a Kamado compact version this summer and your videos helped me a lot getting to know how to use a Kamado. Loved the cooking on a Kamado so much I bought a Kamado Classic 3 today so I can exactly follow your lead 😉 Keep firing them up 😎 👍🏽

I am not a wing man, but that looks wonderful and I will add this basket to my wish list. On clean up, which is a part I don't like, but can you put this in the DIshwasher to remove the burn sugars? Is there plastic in the end pieces that would melt if greater than 500 degrees? Thanks for the videos!

It looks brand new after the dishwasher. Not sure what happens above 500 but you can use the basket without by running a spit through the basket with the stock JoeTisserie

if you aren't going to to do fish, steaks or whatever save the money and get the other basket for 1/4 the price... this is a better basket but only if you use it a few times a month

I noticed when I got mine the other day that you don't actually need to use the black basket holder that has the 500 degree limit. You can remove the basket from that and just run your regular joetisserie rod through it instead.

I don't think so, the Napoleon is too large for things like coffee beans but can do fries, this i think is a little too big to not lose a few

The wings seem delicious. Your explanation of the wings basting themselves in their juices makes absolute sense. The baskets seems top notch quality. However what I like most about it is the steak capability. I like to contantly flip my steaks, however this does the trick even better. Great for salmon as well!

That's a great design! You had me at steaks lol. Easiest way to clean a basket is to use PBW. Soak it in a 5 gallon bucket overnight and it's like brand new😀 Great vid!

I think I'd probbaly just scrub it down with stainless steel wire wool for dishes as I doubt the dishwasher would touch the burnt on chicken skin

I hate cleaning my Napoleon basket, but not enough to splurge on this. I’ve discovered that a good chain-mail cast iron scrubber works best, after a good 30 minute soak; not ideal but $300 for a wing basket is silly. If you do wings every week, maybe, I guess….I might be adding this to my wish list after all…

I agree but ended up forking up the money. But it was $200 not $300 (still a lot of money!) and the feature that made me splurge was the fact that it’s not just a basket for wings, I love salmon, seafood, steaks....all which I’ll be able to do with this setup. Plus it looks well designed...

I saw a ton of people get theirs a month or so early but I assume being in Canada we don’t always get logistics figured out as fast as the modern world lol. Some dealers have them in stock now so if your near one of those you could walk out with one same day This is a solid piece of kit… wish it was half price lol but even at a premium price nearing the cost of my entire Akorn Kamado it somehow still makes sense

This basket looks awesome but $200 is really steep when you’re also talking about $300 for the Jotisserie itself! I’d grab this and the Joetisserie for sure, but will probably wait for a sale price.

I did find a discount with the Joetisserie and waited for Black Friday sales for the basket but I never could find a discount for that. I ended up buying the basket at $200 which killed me...but if I’m going to spend top dollar I also want top quality and this basket looks like it is that! Mine arrives next week....excited to check it out! I do love Smoking Dad’s video’s sooo much! I’m new to Kamado but have been having huge success with everything I cook thanks to his video’s! When my basket arrives I’ll already feel like a seasoned pro! :)))

This was 3.5 vs Costco often 5… I think I can fit 6-7 max in this one. It’s a little shorter but taller without the flat sections in the middle like the Napoleon

The holes in the basket look a little big. For example, small fries can fall out or get stuck. Max 500 degrees is a limitation in use which is unfortunate. And the price is absolutely ridiculous. I can't see that this is a good buy compared to other baskets on the market.

James, I remember when you did a video mentioning how much money you had spent on commercial rubs, and the wisdom(or lack of it) of that and asking if we wanted a more in depth video on the subject. A whole lot of us answered in the affirmative, yet I don't think you ever got around to that. And here you are, using a commercial rub...interesting.

Lol no need. I got some long fork skewers that sit across the top that I can just turn/flip manually gives the rotisserie experience for a fraction of the cost

@@SmokingDadBBQ FYI... so Kamodo Joe didn't make a tesserie for the kettle so I bought the one from Weber grills.... it works perfect and with the napoleon basket it was about $200 for the whole kit... works very well on chicken and potato slices ....

@@yallbugin the basket I use for the kettle is the napoleon basket... with the weber unit on the kettle joe... I''m not sure if the joetinnurie accessories would fit or not... I would think so as its just a square rod... but the price of the weber on the kettle joe is a good deal for sure...

I ordered the Joetisserie on the 20th for $179 from Atlantic Grill! :) But sadly I couldn’t find a discount for the basket.....but still a lot of money...but than again...the Kamado Joe isn’t cheap either....

Great movies Smoking Dad. Just following your channel recently. I noticed in this video you tested the Napoleon result vs the Joetisserie. I myself bought some stuff from a Dutch brand called Letzq. They also have a nice basket which can also be used for coffee beans but also have a carrousel which works great. Would be nice if you can get these to work as well at your place at how they compare
