They’re called pecan logs and they were very common in the south. You could buy large ones at Stuckey’s all over the place. Actually, they weren’t a cream center. They were a nougat center and they didn’t have chocolate on the outside. Just a nougat heavily covered in lots of pecan pieces

We used to get pecan log rolls from Stuckey's on our family road trips down from Canada. They were my favourite American treat. I got some decent ones from Buc-ee's last time but it's been a long time since I've had a Stuckey's one.

It's been interesting to watch Steve change from judging the puddle by hand to using a thermometer frequently. My guess is it helps him be able to cover faster without issues blooming. He can probably tell when it's close but a 1-2 degree change is hard to tell with your body but can make all the difference between chocolate blooming or not so he likely used to wait until it was even lower temperature to be sure.

If you made some with the nuts chopped a bit smaller and roll them in the finer chopped pecans then you would get nuts in every bite. they looked so good, made my mouth water :) 👍
