ITALIAN WHITE BEAN SALAD (nourishing, vegan, healthy!)

I recently spent time in the kitchen in Italy with one of my mentors @RicScalzo founder of @kokoralife talking about the healthiest foods on earth and of course beans came into the conversation! Did you know they are the 1 food that most centenarians eat every day? They are packed with protein and fiber, two of the most important things to consume everyday and are also good sources of iron, copper, folate, magnesium, and B6. Combine those with other Italian powerhouse ingredients and you have one magical dish!

@@GOK_333 this olive oil is called Villa San Cosma from the farm where I stay in Italy. You can buy it online if you message them on Instagram. It’s delicious!
