If you've ever had rotisserie chicken - ie it turns on a spit in an oven thats very similar to this method. But to do it at home is difficult because of the inside dimensions of a domestic oven don't allow either for the bird on a rotating spit or to stand up. We don't brine our turkey in the UK. The way we cook fowl (chicken/ turkey) in my family is to cook it breast down for most of the roasting time (so all the juices run down into the breast). When its ready, take it out the oven and let the meat rest breast side down again. It always makes for moist meat. We dont eat the skin so we don't worry about crisping it up. Happy Thanksgiving! =D

The resason the trashcan worked better than the oven is that an oven does not inculcate as well as a trashcan theoretically would.

The reason the trash can works better than an oven is because the metal is heated evenly by the coals and the metal with charcoals heats up hotter than an oven which is why it cooks faster. The reason its less dry is because you did not need to cook it for as long so less of the juices are cooked off.
