You should place the ends through the prusik in opposite directions forming 2 separate loops. Place one hand in each loop secure with a square knot

Yes! The knot you describe is a Boatswain's Handcuff knot but he tied it with both ends going through the prusik the same direction

a lot of people are saying things like why dont you put one hand in each loop? I think the answer is that when one hand is in each loop, you can use on hand for a brace and loosen the knot with the other, while if they are in the same loop, the prusik functions properly and even if the stopper is undone, will still be challenging to escape

That would be a fair assumption. unless you have the rope cuff ready to use, you won't be able to tie the knot and hold the person down until you can effectively restrain them. the subject would fall asleep out of boredom by the time the knot is done. it would be several times better to have zip ties or duct tape if you don't have actual hand cuffs. It would be quicker to assemble and restrain a subject.

@432fuuzz true, but it seemed a little too complicated to use the rope cuff while subduing a resisting suspect. Ropes will also break or tear with enough time. Restraints was never intended to be used longterm anyway.

That's why I would lock it off with a quick tight square knot. I'm assuming they would be at gun point lol. I'm not taking the time to dress a figure 8 knot though, down and dirty square knot is fine.

This is an improvised method. It is when you forget to bring your flex cuffs or zip ties and all you have is some cord. This is NOT the primary method. It should only be used as a last result. Please people have some respect. Good job I.T.S.

Quicker, yes. Although less effective. This uses physics to help it be secure. Though I recommend using one hand per loop rather than putting both hands through both the loops at the same time.

Don't know the name, looking for it now, but there's a quick one loop hitch that self tightens with struggle that works much better. Way faster, easier to make big and cinch up without fumbling with your knots. I can have it on a pair of hands/legs held together in a three count with any USB cord long enough for three loops. Great for air travel.

We used the individual lines coming from the prusik, and put one though the prusik "finger slack" from each side, and tie a double square knot (to use as a stopper)...then tighten the prusik knot, to form a "pair" of cuffs.

Go around an extra turn or two with that figure 8 knot, because on some ropes the normal figure 8 will bind and can't come undone

Practice. This is not an on-the-spot creative project. You should make a few of them and have them on hand for when you need them. I use one as a lanyard on my pocket organiser. It helps me get my organiser quicker than digging my fat hands into my not so baggy trousers. Plus if it were really really needed, I could then restrain someone with it.

I honestly think this is unreliable - too much play, making escape too likely. "Excuse me, thief, hold still I need to tie a figure-8 placed real close to my prusik ..."???? It appears to me you could use the working ends to frap the wrap between the wrists. This would bind the wrists much more securely ... one could then use any number of bends to secure the knot.
