I would say she got most of the steps right But detected a few short coming. She over cooked the garlic while the rice were not fully coated with the oil. She also do not realised why the chicken when poached has to be cold rinsed. There is a reason for it which she didn't grasped fully. She had not demo how to go about the soy sauce and the chilly sauce which to me besides the chicken itself are the heat n soul of any chicken rice. Take note, hers wasn't as authentic as it may be for any true hainese chicken rice, key aspects like chilly and ginger sauce must be there

You are very careful and you have your own way of doing it. In fact, the boss lady’s cooking has a bit of a home-style taste. Some things can taste good without too much seasoning, it just depends on how you cook them You don’t have to use chicken fat to make the rice very fragrant
