He only makes sashimi out of fish if he knows they’re fresh and safe. On a bunch of occassions he doesn’t eat something if he’s not sure about it
I am so happy that these older videos are showing back up on my feed. It truly shows his passion and interest in the foods of the sea. I am so proud of this young gentleman, he really puts his skills and integrity into showcasing the ingredients and his preparation of them. Yet retains his modesty and respect for the food.
It's official. I need to make friends with a Japanese seafood vendor that will randomly show up with a box of freshly caught seafood.

Hello, I'm from the US and can't understand anything your saying in your videos but I still really enjoy watching them. You seem to know lots about all kinds of fish and how to process them. Lots of fish I've never seen before. They look appetizing. Very interesting. Thanks
