I asked my son to help me cut up a whole chicken this Christmas and normally he would look at helping me in the kitchen as if it was some inconvenient chore away from his video games but this time he was actually interested and inquisitive and he told me he was actually excited to try to cook because he had been watching so much Jaque Pepin during quarantine and it made him look at cooking in a whole new light and consider how fun it could be. It reminds me when Jacque shares memories of his childhood kitchen that never leave him decades later and the attachment he has to family members who have passed but still have them with him in clarity while he cooks and shares in his kitchen.

he made a "wrong" cut for the breast. you usually want to seperate the breast from the caucos by slicing as close as you can at the wish bone. therefore you get all the meat as a part of the breast.

Shinrak - According to what method are you citing? What he did makes the most sense to me. If he separated the breast from the carcass, as you suggest, then being white meat it would dry out. If he roasted the chicken whole, with bone-in, then I see what you are saying.

@@Sodchucker they use a kaku knife and use the back of the knife to crack the leg bone above the ankle joint. They generally avoid cutting bone.

This is a great video. I came after watching an Alton Brown one (from his Good Eats days) also very helpful. It's interesting to see their differences. One thing they have in common that I like about the two of them technique is no.1! But they don't make it seem out of reach for the home cook.

I tried to reproduce this with a amazing free range chicken that I bought. The chicken looked like a piece of meat attacked by a Bobby cat at the end. It is not so easy.

daAnder71 I find slicing afterwards to be more tedious and messy. Butchering before hand in my opinion is usually the best way! You can really taper the chicken to the needs of the recipe & desired finished product. Unless you are roasting a whole 🐦.
