The amount of salt and soy sauce he added would make that dish super salty. However, I guess that the amount of soy sauce added would be because; we get soy sauce in 5 litre cans. Many of the street vendors by these locally manufactured soy sauce, chilli and tomato sauce in cans. They then transfer these into bottles and keep them on their cart. Some of the vendors, buy the branded sauce bottles (like Ching) and put these local sauces in them so that the customer feels that the vendor is using branded items. They also dilute these sauces with water before pouring in the bottles. Hence my guess is may be this vendor is also using a locally prepared diluted sauce and therefore using an entire bottle.

I think he had used the branded soy sauce only, because he opened the sealed bottle cap (02:47) plus he threw the bottle cap in the dustbin too (02:49) and atlast he threw the empty bottle too (02:55) If he would have used any local soy sauce he would have not thrown the bottle cap or the bottle itself into the dustbin I beleive! 😊 I maybe wrong though...

@@utdiptapkashyap your observation is correct I saw it too. However when he picked up the bottle and kept it properly again that is what triggered my suspicion. It might be his bag for collecting the bottle and not the dustbin. My guess may be incorrect too. Because in the end at 5:56 we can see 15 bottles of Ching brand, of various sauces lined up on his cart. If he is using so much of soy sauce the dish is going to be super salty. And for some it would be unhealthy too.

@yeeeeeeeeeth I don't know which city you are from. However you can search in the wholesale food market of your city you might find the local soy sauce there. You would get all the items available with the local vendor. The noodles, the sauces, the chatni. As to matching the taste, have you tried using ajinomoto, it is not recommended and I would not recommend it too. However just for once try it in the dishes you make and see if you can match the taste of local vendor. And you would find that in your nearby grocery store too.

Make health at home. Manchurian balls by taking cornflor, regular all purpose flour , salt , ginger garlic paste and veggies. Gravy , first fry ginger garlic fine chop, add salt pepper soy sauce, tomato sauce, Schezwan sauce, water and corn flour paste ( to make it thick ) . Dont add ajinomoto or tasty salt . It comes very tasty and healthy also
