Chef Johnny's Texas Style BBQ and Cuisine

Homemade sausage is always fun to make and this jalapeno and cheese javelina sausage turned out great. How to make smoked sausage is showed in detail on this video of charcuterie. If you have never tried javelina then a great way might be by making sausage with it. Recipe
Jalapeno and Cheese Sausage
5lbs Javelina
4lbs Pork Shoulder
1lbs Fat Back
4tbl Garlic Powder
4tbl Black Pepper
6tbl Kosher Salt
1can Tomato Paste (6oz)
6-8 Jalapeno Peppers
8oz Cheddar Cheese
Grind the meats with a medium grind
Shred or dice cheese
Mince Jalapenos
Mix all ingredients and stuff into casings.
For smoking the sausage add 2tsp (or to manufacturers instructions) of pink salt and cold smoke up to 4 hours.

The name of a javelina is a collared peccary many people think they are a type of pig but they are not pigs. This is an excellent sausage that will work with other meats. Thanks for watching

@@TexasStyleCuisine Same as javelina, you gotta be careful with the scent glands. We grind the meat coarse and manually with beef kidney fat, bacon grease, paprika, garlic, onions, sage, lemon zest, salt and pepper corns along with the chilis and the halloumi cheese. Grilled on top of coals with sauteed peppers and brown mustard on some good bread, it’s amazing!

Alex Martinez regular salt will be fine if you are not cold smoking like I did. Just throw it on the grill or in the pit and cook it up.

You can get it online. Amazon has it. But if you don’t cold smoke it you don’t need any. Just put it on the grill or bbq pit and cook it.

Ok so what temp did you smoke those at? And did you just smoke em until you liked the look?

I describe the temps in the video. When I smoke sausages I start at 150 then bump up to 170 then 190. I spend a couple of hours at each temp. I take the sausages to 155-160 degrees internal temp.

Thanks for the video and recipes. I was wondering if meat is meat mostly or are some better suited for some spices and some not. Do you equate beef with venison, or pork with javelina... what spices work for one works for the domesticated vs the wild animal ?

This recipe works great with beef or venison or all pork. As long as it is not a mild meat you should be fine using this recipe. Try it with goat or lamb you will enjoy it.

That looks so good, but don't javelina have a nasty smelly sack on the back of them? Are they hard to clean? I've only had wild hog which I love.

stratchic they do have a musk sack on their back. I will have a video up of skinning one in the next couple of weeks. Many people don’t eat them but it is only because they have not tried them.

Whats a good internal temp until they are cooked? I was told 130 degrees, that seems a little low for pork.

I have blocked this guys channel. His food looks great but, the way he pronounces Javelina is completely wrong. He pronounces it hov-a-leena. NO NO NO. It’s have-a-leena. The way he says it is like nails on a chalkboard to me.
