He's in way too much of a rush here. Must work in a kitchen or something. Also, more crushing and less hammering in the bashing. The pestle shouldn't have that much air time. You can get a lot more control and less mess than what he's doing here with a little practice. He's got great enthusiasm here though, maybe getting people over their cooking intimidation, or something.

This was a video I didn't know I needed to watch~ My ex roommate got mad at me once for using her mortar and pestle wrong, but actually, she was only using one method, the muddling and grinding, and I was using a method my mom taught me, the pounding. So she was only half right, and I was right. Go figure, use both techniques!

I like using mortars and pestles just ordered the Jamie oliver oak one for dry spices and the Jamie oliver granite one for all the herbs and oils. Had a marble one and a molcajete (volcanic rock) that I already use. You cant ever have too many of these things. Try to use them as much as possible.

Awesome - thanks Jamie! Appreciate the tip about holding your hand over the bowl or using a towel - I've always gently come down and crushed to avoid the popping - rather than bashing. Nice! I have a granite mortar and pestle, but just purchased a molcajete - came across your video when looking for recipes for the molcajete. Thanks for all you do, keep up the great work you do!

In my humble opinion it does. A granite mortar has a more abrasive and a harder, less porous surface so it will be better suited for grinding whole spices and it will retain less of a hint of what you have ground up in prior sessions. It is also significantly more durable and can last for generations with proper handling. If you have a choice, I would go with the granite mortar and pestle combination or at the very least one made of marble with an unpolished interior. Happy Cooking Iron Man!

Have you used with black garlic? It not only can enhance different herbs, spices, etc. it infuses a wonderful flavor into the oil: it takes 2=3 weeks to make black garlic, but well worth the effort. Just try to make enough to get through a few weeks at a time so can start a new batch. Also you can make flavored oils. It works very well in pestle and mortar, especially when infusing them in oil.

I just used rosemary, cayenne pepper, thyme, garlic, salt, pepper, oil and honey to make a bagel spread. For anyone that is curious on making this too, grind up the dry ingredients first or you might get some chunky bits

Remember, cheap stone mortar and pestles often shed material into your food. Look at teeth from the stone age. They are small nubs, ground down from coarse sand in their flour. There is no way to remove it either. The solution is to not buy cheaply mass produced imported ones, but get it from someone you know and trust who can make stone mortars, or better yet, poured brass mortars.

I got a President's Choice (PC) Granite Mortar and Pestle. The instructions say to wash with soapy water, but I hear people say soap will absorb into it. I will do the rice method to hopefully stop the powder granite issue. However, when people talk about seasoning your mortar and pestle with certain spices and seasonings, wouldn't that be a bad thing? What if you are crushing something that you don't want previous flavors of getting onto your next batch?

Thanks. I am trying to grind organic thyme to take medicinally (put in capsules) but I cant get it to go to powder. I was crushing some dried peppermint from the garden into an old spice bottle using a chopstick and I'm like "wait, is this what a mortar and pestle is for?" Yes. Yes it is. I have some dried nettles that I want to crush into a fine powder. I'm trying to learn how to cook with angry-spinach. I'm thinking that I may want to buy myself a mortar and pestle. I could use a food processor, but that doesn't really crush stuff and make fine powders. Took two generous handfuls of dried mint and made maybe two tablespoons. No wonder people store food this way, it's a very efficient way to keep a lot of food.

One thing that has always been worrying me about mortars & pestles . . . While grinding the ingredients won’t the pestle inevitably grind against the interior surface of the mortar leaving fine dust of the granite/marble (or whatever material making the mortar/pestle) to infiltrate into the ingredients?

Peter Chan I think there’s wood pestles out there made by an Italian on Etsy. You could probably buy one of those and not worry about wearing away your mortar since the wood is much softer than stone.

I think it would be good to add the basic value of using the mortar & pestle... ...Making your own spice mixture (for example) from whole spices (whole seeds) is 100 times better/tastier than using purchased powdered spices or powdered spice mixes. That goes for making your own marinade & flavored oils too.
