Those Pataks pastes are phenomenal. I love making my own sauces, but when you want the flavour without the work, Pataks is the way to go, every time.

Guys stop complaining about the spice paste. It honestly is really really good. And trust me even Asians use spice pastes too, we simply build up more flavour on top of the spice paste.

And usually I add about 10 stalks of lemongrass bruised by wacking them real hard a couple times, as well as lemon leaves and curry leaves. Tamarind adds a subtle that makes certain curries much more appetizing. Sometimes I add in whole mustard but recently I’ve been loving adding in fried shallots instead. Hope this helped!

Joy Lee An Indian chef here working for an unnamed revered Michelin stared Indian restaurant here in London and no, we don’t use spice pastes so I don’t know where you got that from? We may use things like the ‘spice paste’ from things like mango pickle etc but we’d never do that. However, I’m not knocking it and don’t think it’s a bad idea either, just you’re wrong.

One day I tried to improvise an Indian dish , I haven't tried a lot of Indian dishes before but I like the idea of marinate chicken in spices and yogurt, so i cut chicken breast to a cubes then I mixed some yogurt with every spice I had got in the kitchen with honey garlic and ginger, I put the chicken in, I had waited for 2 hours, I baked in the oven, but I got one of worst dishes I have ever cooked, lumps of spicy bloody hot yogurt and over cooked dry chicken and my house was smelling like curry, my dish is a true shame I'm sorry, by the way that look amazing Jamie.

Cook that in a wood oven. I fired mine up yesterday. Tandoori chicken and a few pizzas. Was a good day. All fresh and hot. The pan fried effect will give the meat an extra flavor. Good or bad. ThAt is to be questioned.
