I love Jamie Oliver ! I left home and started cooking for myself at age 14. I relate to his casual cooking style and enthusiasm. My husband who really isn't a cook or chef is so uptight cooking, using three different trays or plates to thaw, season and cook a piece of meat. And God forbid a veggie touch the roast ! I'm more like Jamie, I grab that leg of lamb, chicken or beef roast , spice it in the same pan you're cooking it in, cut snd toss those veggies in ,throw on some wine, a bay leaf if you like, just get all those tasty things together in the oven in a hurry, and get the party going ! Try a whole chicken w/ garlic heads, big slices of pumpkin,yes PUMPKIN, onions , celery, parsnips, potatoes, turnips, salt ,pepper rosemary sprigs & olive oil Whatever ! Delicious ! I have a huge cast iron skillet that belonged to my great grandmother who's been dead 45 years , I 65 and it's old well over 150 years old ! That's what I use for the roasted chicken dish all in one pan. I've roasted turkeys, made big pizzas, even corn bread for a huge crowd, and once even cooked sausage, eggs, and bisquits over the campfire for a crowd. I love that pan! Get cooking folks ! I'm doing a leg of lamb gor my dafs 88th b-day next week. Oh, and for Thanksgiving and Christmas Jamie Oliver's " Get ahead gravy" you must save that recipe ! I use it every holiday.
