Jane Eyre's Seed Cake

How to make the seed cake that Ms. Temple serves to Jane Eyre and her closest friend at boarding school, Helen Burns! Charlotte Bronte makes the scene very special, as the other teachers are too mean to even give them extra slices of toast, but Ms. Temple brings out a whole seed cake wrapped in brown paper. They share an intimate moment in her schoolroom, with tea, and this is before Helen Burns becomes fatally sick.
INGREDIENTS
5 eggs (separated)
250g white sugar
150g self-rising cake flour
a small handful of caraway seeds
sugar for dusting

This looks like a nice, moist and light cake, but before beating the egg whites make sure the mixer beaters are cleaned very well as the fat in the egg yolks will prevent the whites holding any air and they won't beat up as they're meant to. My Mum used to make a different caraway cake when I was little, This is one I'd have a go at making though.

Not sure about caraway seeds in a sweet cake.. I like cheese with caraway seeds very much and in sauerkraut, but in cake it must be weird.

Trina S might just try it out then. I just think of like something that belongs in savory food. It’s the same with poppyseeds. In some places poppyseed cakes are very popular , I mostly use it on top of bread rolls 😊 but I’ve been thinking of trying out poppyseed and lemon cup cakes 😊
