Excellent tutorial for baking. I learned that almond flour can be quite unhealthy so coconut flour is better choice, yet too many eggs is also not good so egg substitutes is optimum option mixing with real eggs. But I had no clue how to do it, thanks to your great tutorial it will help a lot now. I also need to avoid higher purine foods, so keto helps.

Thanks so much for the great info! What happened to gelatin? It can be used as an egg substitute when mixed with 2 Tbsp warm water and mixed thoroughly and then 1Tbsp of HOT water added to it and mixed in. Do you ever use that? If no, is there a reason you don't use it?

You're welcome. Yes I have used gelatin as an egg substitute. Another egg substitute that I like to use is Greek yogurt.

Hi Janete !! I don't like flex seed , I have been use yogurt as eggs substitute and it's working fine in all my vegan and GF recipes, 120grams or 1/2 cup of green yogurt or butter milk ( 240ml of milk mix with one tbs of vinegar) Do you think it's will work in recipes with coconut flour!!! Yes you can use Greek yogurt as an egg substitute in most coconut flour recipes. You may need to adjust the liquid slightly in some recipes and it may not work for all recipes.

You have to use psyllium husk and psyllium husk powder very sparingly or it will turn you food a weird color and have a really strong flavor that I do not like at all.

hi MadammJanet, Just wanted to ask, if what is the optimum, proper proportion of Coconut flour to Pstyllium husk ? I find it bita hard and challenging and cumberome to weigh in details everytime im preparing my breakfast or any keto snacks. Om at a borderine type 2 , and i have decided to decarease all acrb intake on may dialy meal, and yor videos help me a lot/ But I am plannaing to have a ready mix coconut flour with psyllium hausk and baking powder or swettner , that i can just store it in the ref and anytime i need it i can just take it and mix with the wet ingredients go for a pancake, a mug bread or a muffin or bun. But I am wondering if what is the proper proportion (ratio) of Psyllium husk to coconut flour that will work ??? Thank yoi again Madam Janet... More powers and Keep on Cooking.......

Psyllium husk is a little tricky when using coconut flour because they both are very absorbent. There really is not an exact ratio with psyllium husk to coconut flour. It all depends on the recipe. I would use anywhere from 2 to 4 tablespoons for every 1 cup of coconut flour for a starting point

Hi.thanks for the great ideas.i,m starting to cook bread as my new hobby.i,m wondering if your recipes work ok in breadmaker..and..as i want to substute white flour for coconut/almond blend..and eggs are so important to bind the mix, How to do it if original recipe uses no egg?tks

Most of my bread recipes are quick bread recipes so they don't work in a bread maker. If you are wanting to use the coconut/almond flour blend and the original recipe calls for no eggs start out with 2 eggs. Once the ingredients are mixed together test your dough and if needed add another egg.

Could you use part reg eggs and part flax eggs. Like if a recipe called for 4 eggs use 2 of each.

I’ve lost my taste for almond flour. I just don’t like the taste anymore I’m going to try cooking with coconut flour . I haven’t tried yet so I’m going to be your shadow.

Too many eggs in with coconut flour is too over powering all I could taste was eggs.

I like to use a mix. No more than 2 or 3 eggs. Then if I need more binder I use an egg substitute of some kind
