I didnt start recording specifically for the #threeriverschallenge until January 6th so the days (like day 1, 2 , 3,etc) are messed up on the videos . I had to go back to my meal planner to get it all sorted out. I often make more food than gets eaten so when it says 2 days and it seems like there are only 2 meals-that is why.
January 6th was grilled cheese with honey ham for lunch and "crab spread" hand pies.
Recipe for our favorite "crab" cheese spread . We eat this with crackers, on tortillas and Romaine lettuce as a wrap, on naan or pitas and even on a this sour dough bread.
Crab Spread Recipe
Blend the following together in a mixing bowl until fully mixed and smooth. We add different hot sauces to make it delightfully spicy as well.
4 CUPS - NOT OUNCES- diced imitation crab meat (we sometimes chop up steamed shrimp just to add some extra flavor)
8 ozs softened cream cheese (we also often add 2 c shredded cheese and 4 ozs softened cream cheese)
1 TBSP EACH:
granulated garlic, Cajun or Creole seasoning (We prefer Slap Ya Mama); smoked paprika; cumin and minced or powdered onion
1 tspn each:
lemon juice; kosher sea salt; white or black ground pepper
MIX until all ingredients are well blended together.
Can be formed into a ball and rolled in oyster crackers then wrapped in cheese cloth or plastic wrap and chilled for 2-3 hours until firm.
ALSO great when used in soups or baked in crescent rolls.
January 7th was Stuffed French Toast which I lost the recording for so I showed the French Toast I made for the freezer instead.
Here is the original base recipe for the Stuffed French Toast
Cream Cheese and Preserves-Stuffed French Toast
Ingredients:
Blend together
2 tablespoons preserves of your choice (I used apricot) and 4 ozs of softened cream cheese
Recipe for custard:
¼ cup milk, half and half or coffee creamer of your choice
1 large egg, beaten
¼ teaspoon vanilla, almond or other extract of your choice
cooking spray (I prefer to use 1 TBS of butter, melted in pan)
Directions:
Gather all ingredients.
Spread 1 tablespoon preserves and cream cheese mix onto one side of each of 2 slices bread to make 2 sandwiches.
Whisk together milk product, beaten egg, and extract in a shallow bowl until smooth.
Soak each sandwich in milk mixture until bread is moistened, about 15 seconds per side.
Coat a nonstick pan with cooking spray 9 or butter) and heat over medium-high heat.
Cook sandwiches in the hot pan until browned on the bottom, about 2 minutes. Flip sandwiches and continue cooking until the other side is browned, about 1 minute more.
