I work as a server here in Australia. As you said, there are people who use casual talk with no affection. They just point, they don't look at you or smile at you or say please or thank you. They try to use the least amount of words possible when interacting with me. There are also people who speak casually with affection, but here it's a bit inappropriate in my opinion. They use words like "love" or "darling" to call out to me, which, as a woman, definitely makes me uncomfortable. Mostly women use this affectionate speech though, but it still bothers me because I don't even know these people. I take care to speak respectfully and appropriately to everyone, so it would be nice to receive this same care in return. I don't think it matters much to many others here in Australia, though, and we are highly encouraged by our managers to smile and speak loudly and chat as much as possible. But that's probably why I prefer to live in a society similar to Japan where there are none of these expectations. I wonder though, especially as a female, what kind of expectations does society hold for me in Japan?
