My favorite part is scaling the fish... So satisfying. UvU 1. The meticulous preparation. It's a simple dish but they can make it like the chef is doing an artwork. 2. Cooking skills is good, the vegetables and tofu are cooked well and not overly done. 3. The whole fish was eaten except for the thrown away intestine and bones.

That looks more like a Red Parrot Fish than a Grouper. At 0:09 just under the Red Parrot Fish, you can actually see a grouper.

The guy expertly prepares 4 dishes out of one fish and people in the comment section talk only about the species of the fish. In the US we can barely make one decent meal out of one fish. This is high practical culinary art being shown. Understand that.

Used to have an aquarium with salt water fishes and that fish looks just like a Parrot Fish. A much larger version or large Parrot Fish.

The grouper is the fish right below the one selected, although I'd count that as a win if the consumer paid for the grouper. Parrotfish would most likely be more expensive.

That is a female Parrotfish (males are blue), and you can see a Red Grouper right under the parrotfish for a couple seconds @ 0:07

Qin Woodruff in my opinion parrotfish is not good tasting. They have it at Philippine markets but we never buy it.

I ate it raw before but not as sushi. It's technically a dipping hotpot but I just try one raw before we cook it It's... kind of meaty. Tough too, especially the skin. I'll say it isn't exactly a sashimi fish. It taste great though but I'll prefer it poached over raw anyday

Parrotfish is better "raw" in ceviche than just by itself. Grouper raw isn't that good texture-wise unless you cure it until it slightly firms up, I recommend you get a grouper of quality and if you're doing sushi you could blowtorch the skin side for texture contrast
