Why exactly did she kill her cousin though? I'm not too familiar with any rewrites of her story but I do know that in some versions she ends up killing her uncle, I just never hear about her killing anyone else nowadays

Pretty sure that's not true. Sally canonically doesn't like kill and her uncle died in two version. One is out of fright and other is prison sentence.
