For really good flavorful gravy, you gotta cook your flour in your grease with salt and pepper until the flour starts turning brown. That's when you add your liquid. The more you cook your flour, the more taste you get. That's all you need. You don't need to add any other spices.

I use all the juices from veggies & fat from the meat and often boil onions and carrots just for the juices. I use flour, sometimes the starch from potatoes as my thickener, and add fresh herbs and gravy colouring (bought from the UK) for that nice rich brown colour.

@@JoeBoone82 No, that's an ignorant stereotype. Long story short, Two World Wars with a Great Depression in between did way more damage to the British food supply chain than in a lot of other Western countries. We didn't come of wartime rationing until almost a decade after WWII finished, and it took a couple more decades on top of that to get things going properly again. Nowadays, not only is our traditional cuisine up to par again, we've got loads of cultures from all over the world bringing their own cuisines in. Just don't expect a lot of great Mexican food. We don't get many Mexican immigrants in the UK, so no good baseline to set a standard. I once took my (American) wife to a local "Tex-Mex" restaurant in my hometown, she ordered the chicken chalupa, and it came out wrapped in puff-pastry and drizzled with hollandaise sauce. Having said that, most Americans think scones are huge triangular cake-slices slathered with icing, and that shepherd's pie contains beef -- even though shepherds don't look after cows. So nobody's safe from mockery, here. 😉
@lisadowsett6836
@lisadowsett6836 Жыл бұрын
@@JoeBoone82 Food in the UK is actually great, but like everywhere else, we have the odd restaurant or fast food place that's doesn't have the best of standards. It is very diverse, we get all types of European food, plus African and Asian and Mexican, but unfortunately we don't get traditional American food (we get KFC and McDonalds but that's all, and it's hardly traditional American food) My sister-in-law is from North Carolina so our families have been going back and forth from the UK to USA for years - when I get back to the UK I crave corn dogs, biscuits and gravy and butterfinger bars, you can't get these anywhere in the UK, and as much as I love my sister-in-law, she's the first to admit she can't cook lol
@bamachine
@bamachine Жыл бұрын
@@Beedo_Sookcool As for the shepherd's pie, that is just people who don't know the cooking terminology. We have both types here, lamb aka shepherd's pie and beef aka cottage pie. From my interactions with British, Welsh, Scottish and NI people, my impression is that the best non-British food you can find in the UK is Indian food. That is much like Mexican food here in the US. Just like Americans took Mexican food and combined it with different local ingredients to create Tex-Mex, things like chicken tikka masala did not originate in India, it was an Indian chef in Scotland(anecdotally but Indian people will tell you it did not originate in India, just somewhere in the UK), using local ingredients, that came up with the dish. Here in the US, we have access to so many different cultures(as you do in the UK also) but too many people are too insular within their own groups. We need to learn to communicate with all these different cultures to learn from one another. That is how true great fusion happens, in both culinary pursuits and in broadening our outlooks.

Jamel, I may be an old white guy, but I am from the VA/WV border and my grandmas on both sides could make sausage gravy and biscuits which had way more flavor than any brown gravy (which has its place on potatoes). You got to have good seasoned sausage, and add a little bacon fat drippings and brown up the flour with some salt and pepper add some milk or canned cream (condensed milk) and if it is too thick add a little coffee to thin it out. On butter milk biscuits with some sopping eggs, now you in the south. Never heard of baked beans on toast, but pinto beans on corn bread with catsup, oh yea. By the way ever had cornbread crumbled up in whole milk in a glass? You would never neat cereal from a box again.

Your comment about thinning the gravy out if it's too thick reminded me of the gravy my dad used to bring home from a church-run breakfast he used to help with. It was always ridiculously thick, to the point where I could almost spread it with a butter knife. Eventually I asked my dad how they were making the gravy, and he told me the guy cooking the stuff was taking pre-made sausage gravy and then adding like a pound of extra sausage to it.

Yes, Spotted Dick is one of those weirdly wonderful names for British dishes, along with Toad-in-the-Hole (strips of meat or sausages cooked in Yorkshire Pudding batter) or Bubble-and-Squeak (cabbage, onion, and bacon fried in grease, so named for the sound it makes as it cooks). Spotted Dick is a steamed pudding served with a custard sauce as a dessert, and gets its name from the currants it contains. It gets a mention in the 1974 version of 'Murder on the Orient Express'. The character of Beddoes, manservant to the victim in the case, explains away an old bump on the back of his head as having been acquired during a 'fracas in the mess over the quality of a dish called Spotted Dick', to which the detective Hercule Poirot comments that he (Beddoes) has 'been spotted, too', meaning that Poirot as seen through his story.

Fun video! Thank you! 4:41 -- Okay, you asked, so let's do this. And trust me, I *AM* going to answer your question, it just takes some time and wandering to get there . . . . "Pudding" is a multi-purpose English word that can mean a type of sausage, dessert in general, a specific type of dessert, or a specific batter-based dish. "Pudding" is derived from the Norman French "boudin," which is a type of sausage. And if you've ever had the pleasure of eating Cajun cuisine, you know exactly what I'm talking about. So the first puddings in the English language were definitely sausages, and came in several varieties -- black pudding (made with blood), white pudding (made without blood, or much in the way of seasoning), hog's pudding (made without blood, but WITH seasonings), etc. Then you had suet puddings, which are a dense, cakelike type of dessert, where the lump of dough / batter is rolled up into a linen "pudding cloth" to be cooked by boiling it in a pot for several hours. And it's often rolled into a sausage shape, so that it cooks more quickly and evenly than just a big round blob would. (And the sausage shape is why it's also called a "pudding"). They're more delicious than that description makes them sound. They're usually served hot, with warm vanilla custard. Delicious! But then, suet puddings could also be made in other shapes, from simple upside-down bowls (sticky toffee pudding) through various other shaped moulds, to near-perfect globes (like Christmas puddings). And from those specific sausage-shaped suet pudding desserts, through suet puddings of any shape, "pudding" could then stand in to mean ANY kind of dessert at all. (But why Americans use "pudding" to mean only a certain type of custard-like dessert, I don't know for sure, unless it has something to do with the custard historically poured on top of suet puddings.) Then you've got Yorkshire pudding, which is basically just a milk & egg batter that's poured into a hot pan and baked in the oven to fluff up and go crispy. (It's been likened to an unsweetened Dutch baby, or a popover, if you've ever had one of those.) Usually, you have Yorkshire puddings slathered with brown gravy and served up with roast dinners for some added texture. But they also serve them for dessert in Yorkshire, with jam on top, which is why it got called Yorkshire pudding in the first place. That's how we get the word "pudding" used for sausages, sausage-shaped desserts, dessert in general, and a specific dish made out of batter that can be eaten either as a dessert OR a side-dish. NOW, THEN -- the rest of this story probably isn't going to go quite how you might expect . . . Spotted dick is one of the suet pudding desserts. It's a dense, floury, cake-like substance, made with fine citrus zest, sometimes cinnamon and nutmeg, and dried fruits like blackcurrants and/or raisins (which are the "spots" in it). It's delicious, and best served hot and covered in warm vanilla custard. The other part of this dessert's name is thought to be from a local pronunciation of pudding, as "puddink." (You can hear a similar pronunciation when some English people say "somefink" instead of "something.") Spotted puddink eventually gets shortened to "spotted dink," and then, after a while, you end up with "spotted dick." And it was the FOOD that called that word first, NOT the male anatomy. But because the food was long, sausage-shaped, warm, and firm . . . it didn't take long for guys to start calling their anatomy after it. I hope that answered your question. Thank you for attending my TED Talk. 😉

4:18 - Spotted Dick: Ingredients 250g self-raising flour pinch of salt 125g shredded suet 180g currant 80g caster sugar finely grated zest 1 lemon finely grated zest 1 small orange 150ml whole milk, plus 2-3 tbsp custard, to serve Method STEP 1 Put the flour and salt in a bowl. Add the suet, currants, sugar, lemon and orange zest. STEP 2 Pour in 150ml milk and mix to a firm but moist dough, adding the extra milk if necessary. STEP 3 Shape into a fat roll about 20cm long. Place on a large rectangle of baking parchment. Wrap loosely to allow for the pudding to rise and tie the ends with string like a Christmas cracker. STEP 4 Place a steamer over a large pan of boiling water, add the pudding to the steamer, cover and steam for 1½ hours. Top up the pan with water from time to time. STEP 5 Remove from the steamer and allow to cool slightly before unwrapping. Serve sliced with custard.

Milk gravy is only good if it is made from the meat grease where sausages, bacon, ham or any fried meat has been fried. You pour off most of the grease and add flour to the grease and brown it a little bit and slowly add the milk as you stir turning down the heat a little bit to not scorch it. Stir until the consistency you prefer and pour it from the pan into a bowl.

But for some reason, I KEPT trying them, on and off, throughout the years. And eventually, about 10 years after I first tried them, I got a really, REALLY good batch. As in, life-alteringly good. Since then, I've had several more excellent examples of the dish, and several that were crap. All depends on who makes it, really, and I can understand not wanting to risk it, after some of the slop I've ended up with. But the ones that WERE worth the risk? Bloody marvellous.

The problem with most restaurant B&G is they take canned cream gravy, and sometimes toss in some chopped up sausage. True sawmill gravy, cook the sausage, them make a flour roux from the drippings, then add whole milk, then season with salt and pepper. When it thickens add the sausage back in. That has a ton of flavor.

Yes Beans on Toast are a traditional British quick breakfast or snack option. I myself tried making it to see what all the British Hubbub was about. I even went to the pain of finding a grocery store in Austin, Texas that had a British food section just so I could get the exact same beans that they mostly use over there. I made some toast and buttered it, and spooned heated beans over it. I've heard some brits put brown sauce, supposedly like Worcestershire sauce, on theirs but I didn't bother. I have to say that I wasn't impressed. I ate it. But not only was it just not very good. I still felt like I hadn't had a real breakfast yet.

Hello. I am one of five Englishmen in all of history who hates baked beans. Having said that, I understand WHY it's so prominent as comfort food in the UK -- it's because for about 15 years during and after World War II, food was heavily rationed in the UK, and the best value you could get for your ration coupons was tinned food like baked beans. So people ate them a lot, and their kids grew up eating them. And then they passed that down to THEIR kids. It's kind of like Hershey's "chocolate," grits, or collard greens in the USA -- definitely not the best food on the planet, but if you grew up with them, you have a fondness for them, anyway.

It has to be white gravy, flavored with salt, white pepper, paprika, and a little cayenne pepper. Also, toast the biscuit so it holds up to the gravy. And always make with sausage. That and eggs Benedict are my absolute favorite breakfasts ❤️

My dad hunts wild boar and makes sausage with it. Some batches the seasoning has a little kick. It makes a good sausage gravy, it's leaner than regular pork sausage but still good.

The Beans on Toast that's served in the UK used Heinz baked beans the don't have nearly the amount of seasoning that...say...Bushes Baked Beans (or an other U.S. made baked beans) has. Speaking of seasoning. You'd think that a country that went all over the world to conquer lands for their spices has the blandest foods. I love how these guys from the Jolly channel expose themselves (and others) to seasoning rich American cuisine from the different regions of the U.S.

When I make my biscuits and gravy, I use maple sausage and bacon for the gravy, and honey butter biscuits. Also, if I can’t see the pepper in my gravy, there isn’t enough pepper.

American here, commenting on beans on toast...don't knock it 'till you try it. It has to be the Heinz Beans type, with a tomato based sauce, but, still, the pork 'n beans and beanie weenie types (franks 'n beans) do just as fine. The beans in their sauce has to be warm and the toast freshly toasted. And you have to eat it RIGHT AWAY or else, yeah. Sogg city. Let me tell ya though...when you get it just right, when the sauce has gently soaked into the toast, but, it's still crisp and crunchy, ooooh. The toast pops like caviar and the texture combination of the lightly chewy beans and the crispy toast... ...Yeah. Believe it or not, you got something special. Don't knock it till you try it. If the odd pairing seems too off-putting to you, consider that grilled cheese and tomato soup has been an American diner type classic for ages. It's not far off from that. It's just that the soup or 'dip', so to speak, has a little more 'back' to it; more substance, and, it's all eaten with a fork and knife. I also recommend it with an egg, over-easy, maybe even some bacon. Sunnyside-up is a little too raw for me, and, breakfast sausage a little too rich for this dish, imo, but, to each their own. Damn...gotta have it now. lol

It is a shame that you don’t live in an area that has a Bob Evans Restaurant in it. They have a very flavorful sausage gravy and biscuits entree available on their menu. The furthest West the chain has a restaurant location, is in the Greater Kansas City, Missouri area. Most of their restaurants are located in the Appalachian states, and in Florida.

I grew up in Kentucky which has a lot of English and Scottish and Irish immigrants. I grew up eating pork and beans with toast and scrambled eggs. But I didn't put my beans on my. Although I do like pinto beans on crispy plain toast. I am 55 and I've ate this combination all my life. It was poor man's food.

milk/flour gravy needs black pepper. When you cook it correctly it will not taste like raw flour or dough. It will soak up the flavor of the crumbled sausage and black pepper. I always see pale white gravy on videos like this. Some restaurants don't even make it right. If you start with good sausage , good buttermilk biscuits and cook it correctly, B&G has tons of flavor.

A restaurant in my old neighborhood, in Atlanta, called Home Grown, had the "Comfy Chicken Biscuit". A massive cathead biscuit split open and topped with a huge fried chicken breast cutlet and smothered in amazing sausage gravy. You couldn't eat it every day; but for a cheat day treat it was amazing. The key is a generous portion of a very flavorful sausage for the gravy. It is virtually impossible to get enough pepper into a plain white gravy to make it truly good; but adding some good spicy sausage, with its rendered fat to make the roux, works magic on it. The British tend to use Heinz beans (the blandest possible iteration of beans that I have ever experienced) and serve them on the plate along with the toast so it isn't immediately soggy. Spotted Dick is an English pudding (like a moist cake) that uses beef suet as the fat source (sort of like using lard in your pie crust) and is "spotted" with dried currants (sort of like a raisin). It is frequently served with a custard cream sauce.
