I once heard him say "you play an openings statement and that's like dropping a turd, and now you have to figure out what to do with it". I love Peter, he's one of my favorite musicians, but his metaphors never make any sense.

So I am not sure I saw this correctly. Is this gentleman play a Dom Chord a Half Step above G7 to create tension before resolving to C major?

Actually he plays Ab7 instead of D7 since Ab7 it's a tritone away from D7, resolving to Gmaj7.
