The demon doesn't get the soul after they die. It goes to hell. As Rodan says, dead witches wander hell scared crap less for all of eternity. The witches sacrifice angels EVERYDAY to appease the demons. The more angels that are killed, the more powerful the pact demon becomes, and in turn, the more powerful the witch becomes. It would make sense to for that to be the way the system works if the pact demon doesn't get the soul in the end. And because the soul is that of a witch, of course who ever is the first to claim it in hell becomes more powerful.

Itachi Uchiha Jeanne is an unlockable character in both games and has her own costumes as well as Bayonetta.

Once you complete the game on any difficulty you unlock the ability to play as Jeanne through story mode. And if you beat all of the chapters on 3rd climax, you unlock the ability to play as Rosa (Bayonetta's mother) as well.
