Awesome video and recipe! 美味しそう! Here’s a secret trick: In Jamaica, they use pimento wood to cook their jerk chicken. Coincidentally, bay leaves give off a very similar smoke/taste to pimento wood. So, cook the chicken on top of a bed of bay leaves and also occasionally throw in a few bay leaves over the charcoal to give a similar taste to authentic pimento wood jerk chicken ;) Also, habanero peppers is an important key ingredient to jerk chicken. But, I understand it might be unavailable in Japan. Lastly, many Jamaicans actually use soy sauce in their jerk marinades.. so don’t be shy with the soy sauce :)
