Oh gosh, genuine nasi lemak vs fake nasi lemak icecream ..very interesting, amazing and a good experience. I guess many Malaysians haven't come across nasi lemak ice cream...l'm one of them 😂🤣😂🤣 A big shout-out to Creme de la Creme...will definately try it when l visit my daughter in KL. as a Malaysian who has same tongue as Steve, I understand really well how anchovies taste for us..I'm the only one in my family who can detect anchovies in sambal even though other people say they couldn't taste the anchovies..i usually eat nasi lemak with kuah masak kicap (ayam/daging)

Steve, the sambal in nasi lemak is different from the sambal belacan that you eat raw with cucumber as salad. It is called sambal tumis and not sambal belacan. And yes Ivana, you are right about the lemongrass as one major ingredients in the ayam goreng rempah. Lots of shallots and lemongrass.

Steve - correction, belacan is made of tiny shrimp (krill like). Its actually shrimp paste. Most sambals or Malay cooking tend to have a bit of belacan.

For me the best nasi lemak would be the santan (coconut milk) must be from an old, almost dried coconut as the taste is much more concentrated. Also I prefer the sambal to be sambal bawang (onion samball) which my aunt, my late grandmother and late mother used to make it. Hardly I can find it in KL or Selangor except only certain shops in Negeri Sembilan...So far, the tastiest sambal bawang I have ever had is, in one of the shop in Lenggeng Negeri Sembilan and 2 shops in my hometown Rembau Negeri Sembilan...Just simple plain nasi lemak made from santan of dried coconut, sambal bawang, peanuts, anchovies, cucumber and egg

If you’re talking about nasi lemak biasa meaning without any accompaniments, it’s the sambal that differentiates one from another. Without sambal, it’s not the same. What I would recommend is to keep eating the sambal even though you may not enjoy it. Our brains can learn to tolerate and even enjoy flavours after much repetition. Think of any food you disliked as a child but then love as an adult. No BS, it’s all in your head just remember that. Keep at it

Its not sambal belacan steve. Its sambal tumis. And not all sambal tumis has belacan in it. Depends on the cook. Also belacan is not made from anchovies. Its from very small tiny shrimp. Sambal belacan is red chillies pounded with belacan with a bit of salt and sugar. Sometimes onions is added. Sometime slices of mango is added. Depends on the cook 😃😃😃. Ok hope steve will say the correct name of the sambal after this ya.

I’m a Malay Malaysian but I don’t fancy belacan either :/ Also, I used to tell ppl this too so it’s understandable how everyone says nasi lemak = fatty rice, but I believe that it is actually creamy rice. Because in Malay lemak can means fatty or creamy. Since nasi lemak uses santan, the lemak is referring to the creaminess of the santan 😬 If you hear ppl referring to a soup/kuah as berlemak it usually signifies the kuah to be creamy (usually due to santan, milk or cheese).

Belacan is shrimp based not anchovies, but they are those tiny shrimps the size of finger nails. In semenanjung those tiny pink/red shrimps are called udang geragau, in sarawak I believe they're called bubok. However, traditional nasi lemak sambal does not use belacan. Sambal belacan is for ulam (traditional malay salad) and grilled fish. Some sambal nasi lemak use anchovies, like you can actually see whole anchovies in it.

Sambal Tumis guys. Nasi lemak sambal is Sambal Tumis. Btw femented anchovies is budu (buduk), a special dip sauce from Kelantan, Terengganu & Southern Thailand. I had something similar in Laos. Fermented shrimp paste is Belacan. There’s one more special dip… the Cincalok, made from Udang Geragau (dried krill).

Oh good god. That's just down the road from where I live. I eat around there every day (though not at Village Park). From what I've been told, Village Park is owned by Chinese Muslims. On the other side of the block is a really good genuine Japanese ramen shop (Seirock-ya, which is halal) and a Thai Muslim Tom Yum restaurant (Vicchuda). I used to eat Nasi Lemak for breakfast (it was convenient to buy it by the side of the road when I had to teach 8am classes), but it's got a REALLY HIGH glycemic index and I found my blood sugar would shoot up right after breakfast. If I eat it at all it's later in the day. Nasi lemak pizza - hmmm.... I'll check Domino's menu (there's one at the bottom of the square).

Belacan is actually shrimp or krill paste. Fermentation is part of the process hence thr strong enhanced flavor. Sambal for nasi lemak may ot may not have this ingredient. Personally my family has prawn allergies, so we use anchovies instead of belacan to get that umami flavor.

Belacan is not "fermented" small shrimps as many ppl hv claimed. Fermented shrimps are called "cincaluk". Belancan is made of small shrimps (krills) which are laid out under the sun for days to dry, until reaching 5% moisture. In between, they will be pounded into dough like texture. Salt is added to give the belacan its salty flavour. This process is repeated a few times until you get the texture that you want and very crucial to get good quality (smell & taste) belacan. Fermentation is another food process. It is an anaerobic process in which microorganisms like yeast and bacteria break down food components. This does not apply to belacan. I know because my mum used to make her own belacan.

What an amazing experience of savory vs dessert nasi lemak! And speaking of nasi Lemak burger, there was once a limited edition at Burger Labs. I have tried it before pre-covid (around 2018) and it was a HUGE hit and it is very nice, though the coconut side was a lot lesser but definitely the chicken and sambal was spot on. I think Ken (Abroad) did a take on burger roti canai before.

Oh another thing, nasi lemak translated is not fatty rice. Lemak here refers to the creamy taste from the coconut milk, so it's creamy rice instead
