New York Cheesecake (7寸摸具)
饼皮底部:
200g Oreo饼/消化饼
80g 有盐牛油
芝士蛋糕:
500g Creamcheese室温软化
160g 糖
15g 低筋面粉
1tsp 柠檬皮屑
13g 柠檬汁
2粒 鸡蛋
300g Sour Cream
1. 准备7寸活底摸具,抹上牛油铺上烘培纸备用
2. 预热烤箱150度
3. 把牛油放入干净的主锅,设定3分钟/100度/速度汤匙 融化牛油
4. 加入饼干,设定15秒/速度8 混合打碎
5. 将饼干倒入铺好烘培纸的摸具,平均压平底部和周围,放入冰箱冷藏备用
6. 将主锅清洗干净抹干
7. 将creamcheese倒入主锅,设定30秒/速度7 打滑
8. 将旁边的溅上来的creamcheese刮下,再设定30秒/速度7 打至顺滑,再将溅上来的cream cheese刮下
9. 加入糖, Sour Cream,低筋面粉,柠檬汁,柠檬皮屑放入主锅,设定30秒/速度7 混合
10. 用刮刀棒把旁边的芝士糊挂下,盖上主锅盖设定30秒/速度5,同时将鸡蛋从洞口加入。将旁边的cheese糊刮下,再设定30秒/速度5继续搅拌至顺滑
11. 拿出铺好饼干底部的摸具,将cheese糊倒入摸具中,轻敲一下震出气泡
12. 放入预热好的烤箱,设定150度/烤50-60分钟
13. 烤好之后烤箱开一个小洞,在里面降温一个小时。
14. 取出待凉后放入冰箱冷藏6-8个小时,即可享用

Bottom of pie crust:
200g Oreo Biscuit/Digestive Biscuit
80g salted butter
cheesecake:
500g Creamcheese softened at room temperature
160g sugar
15g low-protein flour
1tsp lemon zest
13g lemon juice
2 eggs
300g Sour Cream
1. Prepare a 7-inch movable bottom mould, spread butter on top of baking paper and set aside
2. Preheat the oven to 150 degrees
3. Put the butter in a clean mixing bowl, set 3 minutes/100 degrees/speed spoon to melt the butter
4. Add biscuits, set 15 seconds/speed 8 and mix and break
5. Pour the biscuits into a mould lined with baking paper, evenly flatten the bottom and surroundings, and put them in the refrigerator for later use
6. Clean and dry the mixing bowl
7. Pour creamcheese into mixing bowl, set 30 seconds/speed 7 to slip
8. Scrape off the splashed creamcheese on the side, set 30 seconds/speed 7 until it is smooth, and then scrape off the splashed creamcheese
9. Add sugar, Sour Cream, low-protein flour, lemon juice, lemon zest into mixing bowl, set 30 seconds/speed 7 to mix
10. Hang down the cheese paste on the side with a spatula, cover the mixing bowl lid and set 30 seconds/speed 5, and add the eggs from the hole at the same time. Scrape off the cheese paste next to it, then set 30 seconds/speed 5 to continue mixing until smooth
11. Take out the mould at the bottom of the spread biscuits, pour the cheese paste into the mould, tap it to shake out bubbles
12. Put it into the preheated oven, set 150 degrees/bake for 50-60 minutes
13. After baking, open a small hole in the oven and let it cool down for an hour.
14. Take it out and let it cool and put it in the refrigerator for 6-8 hours, then you can enjoy it
