So how long exactly is it in the pan for? How long each side, how long is the basting? I always overcook it :(

When she pinches her fingertips together and presses the base of her thumb she is showing you how to tell. The firmness of the meat should match that of the hand muscle on different fingers. Index to thumb is rare, middle finger to thumb is medium rare, ring to thumb is medium well, pinky is well/overdone. You can also do a test cut, but if it's underdone the steak will start losing juices and the area around the cut will cook faster necessitating additional cuts to test again. The actual time can vary wildly based on cooking heat, oil used, altitude, the cut of the steak, the thickness and fat content, etc, so a simple timeframe cannot be universal.
