椒盐虾:
食材:
花椒:2汤匙
盐: 1汤匙
虾:600克
玉米油: ¾ 杯
油:1 ½ 汤匙
蒜:8瓣
葱花:适量做点缀
玉米淀粉:3汤匙
椒盐虾是是一道色香味俱全的粤菜。主料是海虾,口味外焦香咸、柔软鲜嫩。虾含有丰富的蛋白质、维他命和矿物质。因为富含omega3,所以经常吃虾对免疫力、心脏和大脑的健康都很有帮助。尽管有这么多营养,虾的热量却非常低。是均衡饮食、减肥的好助手。
做法:
1. 做新鲜椒盐。锅中放入花椒2汤匙,低火,不需要用油。偶热搅拌一下,干炒至有香味出来。放入石磨中。锅中再倒入1汤匙盐,还是用低火干炒。偶尔搅拌直到盐变成浅黄色。和椒盐放在一起。磨成粉末状就好了,放一旁备用。
2. 准备蒜8瓣,切成蒜末。放一旁备用。
3. 大虾600克,洗干净。然后用纸把虾表面的水分吸干。把虾脚和虾须都剪掉。否则一会儿炸的时候容易糊掉。用刀在虾的背面纵向花开,然后用牙签把虾线挑出来。那一个盘子,里边放3汤匙玉米淀粉。把每个虾都均匀裹上淀粉。
4. 锅中倒入玉米油 ¾ 杯,开中火。当油温到180摄氏度,或者手放在锅上又一些发烫就可以炸虾了。把虾一个一个放进锅里,每个间隔1厘米防止粘连。炸35秒钟,底部变橘黄色,就翻一面炸,当两面都呈橘黄色就把虾夹出来,放在纸上把表面的油吸一下。防止虾变软。根据个人口味撒一些椒盐。然后放一旁备用。
5. 锅中倒入油1½汤匙油,当油冒泡时,把蒜末倒入锅中炸, 当蒜末炸至金黄色时就捞出来。炸蒜剩下的油里再加一茶匙油,当油冒泡时,倒入虾,把虾均匀加热。当底面热了以后就翻一面。再依据个人口味加一些椒盐。再倒入炸好的蒜末,关火,搅拌均匀。然后摆盘,把锅里剩下的蒜末和椒盐都撒在虾上。最后撒一些切好的葱花,这盘外酥里嫩,新鲜美味的椒盐虾就做好了。

Ingredients:
Sichuan pepper:2Tbsp
Salt: 1Tbsp
Shrimps:600g
Corn oil: ¾ cup
Oil:1 ½ Tbsp
Garlic:8, minced
Green onion:finely chopped for decoration
Corn starch:3Tbsp
1. Making fresh salt & pepper. Heat up a pan over medium heat, add Sichuan pepper, dry roasting, no oil needed, stir occasionally until fragrant. Put in a grinder. Making the salt, dry roasting, no oil needed, stir occasionally until the salt turns to light yellow. Pour the salt in the grinder and grind the pepper and salt until powder-like and mixed evenly.
2. Wash thoroughly shrimps and pat dry with paper towel. Cut off the legs and beards, slit open vertically and take out the veins and wastes with a toothpick.
3. Prepare corn starch in a plate, and coat shrimps one by one until evenly coated.
4. Heat a pan over medium heat, and add corn oil, put in the shrimps one by one when the oil temperature gets 350F, keep ½ -inch space between each shrimp. Fry 35 seconds, or the bottom becomes orange, flip the other side and keep frying. Take out the shrimps when both sides are orange. Put on a piece of paper towel to absorb the extra oil to avoid it becomes soggy. Add some salt and pepper to taste and set aside.
5. Add 1 Tbsp oil to the pan and when the oil is bubbling, pour minced garlic. Fry until the garlic turns to golden. Add 1 Tsp oil in the pan, once the oil is bubbling, add shrimps until evenly heated, add more salt and pepper to taste, then add garlic. Combine evenly. Turn off the stove. Plate and ready to serve.
